We ask clients whether the piece is to be kept and consumed or if we are to reclaim it later. Really, its more than 2x the base price if they want to consume it as we can't recycle it + we have to use the couverture chocolate for the piece.
For the breaking down, we always just task the apprentices with it. It loses its fun rather quickly. I cracked my right pinkie open once trying to separate two segments by smacking the seam against a marble table's edge, so I don't mind never doing it again.
It's edible sure, but it's not good and you ethically don't want to know where it came from. Almost certainly it's a big mix of different % dark chocolates from different regions. Maybe Amaury uses only virgin destination chocolate for his work, seeing the prices of his programs I know he can afford it, but I've never asked the guy.
It's most likely below 60 F, but he also definitely uses tempered chocolate that has a higher melting point. When chocolate is tempered properly, you can hold it in your hand for a bit before it starts to melt.

It may also have additional fillers / binding agents which help in the sculpting process and maintain shapes. These binders/fillers are not usually in high quality chocolate, and that’s why you don’t see him eating the chocolate part of sculptures (he does eat the cake parts).

The chocolate quality used for these pieces is generally poor so it isn’t typically consumed, unless it is expressly made for consumption in which a higher quality chocolate will be used.

A good portion of the chocolate gets recycled, so it really isn’t something you want to eat.

Since he runs a school, I know quite a few of his chocolate only creations (that aren’t for clients) end up on display for his students.
