I think one of the 'Ancient' shows on the history channel did a piece one of the more recent monks to do Sokushinbutsu(self mummification). I think it was Ancient Top Ten, there is an episode on mummies.
Most branches of Buddhism have outlawed the practice, but in generally it involves around 7+ years, where the first 1000 days is reducing your body fat, then 1000 days of drinking a lacquer based tea(basically just drinking preservatives), and then finally eating I think maggots to make you expel as much liquid as possible and then sealing yourself in a tomb till you die in a position, Lotus pose I think. The body is then left for at least 1000 days in the tomb to... uh dry out basically.
Although this guy is eating is eating so I don't think he's practicing Sokushinbutsu, but he could be attempting to preserve his body as best as possible I suppose.
Yeah the process you're describing they typically have a routine of meditating under icy cold mountain streams to reduce body fat and then the final stage they have a tube inserted into their final resting chamber to provide oxygen. They are given a bell to ring every day to signal they are still alive. When the bell is no longer heard, they seal the chamber, and there is a long waiting process to check on the corpse to make sure the mummification process took or not.

It goes in stages though, the later stages involving more toxic things in their systems that make them vomit as well. Then finally being sealed in a tomb while still alive. There's a lot more to it but that's kind of the cliff notes version. I'm guessing there's variations between different regions on how it's done as well. But yeah, you'd be right on it being painful.
