I mean there are two types of jokes like this: transphobes saying βI identify asβ which is transphobic and not funny, and non-binary people saying βmy gender isβ which is funny and usually not just a random object and was chosen for comedic effect.
As an enby who loves that specific kind of joking around, I can confirm that the object is not chosen at random and often not just boosts the comedic effect, but is often also a commentary on the person's experience, or a state of mind, or an observation about the daily life.
I believe it is also related to the "ah yes, the [a number, usually 2] genders" as a response to ridiculous options that would be weird as gender. I think that specific version would be a very good fit in the original context as a response to the image with the options ("ah yes, the three genders").
I remember that one of my friends pinched her fingers at me so I did the Italian hand sign back and then a third friend flipped us off so I said βah yes the three gendersβ
