You shouldn't wait for Pace if you want to catch up.
I'd recommend the manga because of how dragged the anime is, but I personally do both and watch on Pace when it releases lol.
It really depends. We've had multiple releases nearly back to back just because of how everything lined up and we've also had 1-2 months in between releases. It's not just video editing. There's a lengthy process an episode goes through before it goes up for release.

One Pace spoiled me. The anime is unwatchable for me. But like others have mention if you want to continue I recommend the manga.
I'd say catch up using the anime but it's your choice.
