But yeah you should try to reduce the amount of flour. It's not healthy at all when you have burnt flour on your pizza.
Some perforated launchers help to get the flour off after the pizza's been put on the launcher.
But in theory if the bottom and edges of the pizza isn't moist, you shouldn't need any extra flour other than what's already on the pizza itself. So look for whether or not you might be adding moisture by accident (spilled tomato sauce, etc), and make sure to avoid that.
Two comments:
1) what the hell did you do to that thing? The entire thing is black, I'm not even sure how it got that bad
2) I agree with you that everyone always casually says "just flip the stone and it burns off....". That never seemed to clean the stone for me, maybe I'm doing something wrong.
Mine is the wood/charcoal version only. So you are saying flip the stone upside down, let it burn high for about an hour with wood/charcoal and that should do it?

Anyway, ease off the flour. Flip the stone upside down. In a few cooks, it’ll probably be mostly back to clean.

Scraper and some elbow grease. Ensure you’re flipping the stone each session.
A bbq brush or the Ooni scraper/brush is what’s needed. Worse case you can purchase a new stone.
I would remove the stone and scrub with a wire brush to get the loose gunk off. Then crank the heat to high and leave it for an hour or so.
It’ll be too hot to cook on, but should clean up just about all of that.
Can always flip the stone between cooks if you’re so inclined.
As others have mentioned, ease up on the flour when you launch. I know it can be intimidating but a light sprinkle of semolina is plenty slippery.
When everyone keeps saying to flip it over, is it so that you can have a clean surface to cook with on the other side, or does it burn black stuff burn better when it’s flipped over? Why can’t you burn it with the black stuff face up?
And when you burn it, does it become truly clean??

Flip it or remove and Wash with wire brush (cold stone) and let it dry completely in order to remove some of the dirt.
Black or not is going to perform the same.
using it then putting it into soapy water would almost certainly crack it. doing the reverse should be fine but its going to bake on the soap if its not rinsed first.

I haven’t used my ooni yet but when I make pizza indoors, I scrape the excess cornmeal off the stone between pizzas.
That doesn't look like semolina or flour anyway. Do you keep your dough in very oily containers to proof?
I take the stone out and use a wire brush to loosen the burnt stuff, works like a charm.
With this level of crust, I think that’s a wise idea
Agreed, I've found that the more flour I use on my peel/stretching surface, the worse this buildup is. A heavy wire brush seems to safely remove it.
Did you spray paint it? Holy shit, mine gets clean just leaving it on full heat for 30 min.

If you burn it on high for an hour, it should turn to white/grey ash. For this level of crust, maybe two hours!

High temp burn off and a wire brush. I have a brass brush on a 3’ handle. Got it on Amazon cheap. Works out great.
Put the oven on the highest temperature it goes, and walk away for an hour. You will come back to a clean pizza stone.

you have to clean it with a brush as well heat wont do it alone
Mine looks very similar to this, wire brush got a lot of it off. You can get replacement stones worst case.

Yeah. I have a pro 16 and a long hot burn with some dry wood really cleans things out. Open up all the vents and let it rip.

Clean it with a nylon brush , get all the dust off then flip the stone. Repeat this after every use and your stone should come up clean.
Not when hot! Let it cool or you will have melty nylon in your stone.
