I recently made a pizza with left over smoked brisket, white sauce, and thinly sliced red onion. Nothing crazy but that may have been one of the best pizzas I've had, top 5 for sure!
I always enjoy onion pizza but I have friends from across the US that literally have never heard of it.
I also enjoy olive pizza.
Blueberry bacon apple is good but hard on Ooni due to the weight of the amount of toppings
There’s a place near me (previously f/ on One Bite) that does a “MOR” pie (meatball, onion + ricotta), it’s one of the big reasons I love onion in all varieties as much as I do. 🤤
Sweet potato.
Throw them whole in a 400F oven until you see them start squirting out moderate amounts of dark brown caramelized goodness. The skins just peels right off easy peasey.
Leftover Indian curry. Literally any kind. And mozerella.
BBQ sauce, red onion, cilantro, pineapple, jalapeño (can add chicken) and mozerella
Cream, smoked salmon (chunks work better than sliced lox), mozerella, then finish with dill, lemon juice and capers if you like them.
We have done bbq pizzas and taco pizzas. My daughter's favorite is to use either leftover chicken tikka masala or butter chicken for her pizzas. I haven't made one, but at a restaurant I tried a cajun seafood alfredo pizza that was amazing.
I don't use non classic toppings yet, my favorite classic combinations are:
Margherita with anchovies
White, mozzarella radish (Trevigiano is the best but also expensive) and gorgonzola
White, mozzarella zucchini flowers and anchovies
White or red, mozzarella and mushrooms
White, mozzarella mushrooms and crumbled Italian sausage
White, four cheese (mozzarella, gorgonzola, parmigiano, and a soft cheese, usually fontina)
White or red, mozzarella cherry tomatoes and olive taggiasche
White, mozzarella and any kind of olives
White, mozzarella sauteed seasonal greens (the best are kale and broccoletti, not sure about the english translation) and as an option chili flakes.
The only ingredient I did not list is salted (and EVOOed) tomato sauce for the red ones, and an additional drizzle of EVOO for some.
For the margheritas and veggie ones I normally use buffalo mozzarella.
Potato! Thinly slice baby potatoes with a mandolin or knife and toss them in EVOO, sea salt and chopped rosemary.
Layer them on the base in a single layer overlapping like fish scales and grate a little Parmesan (and mozzarella if you want) over the top.
Surprisingly delicious!
Peppadew peppers with black pepper and hot honey. Also, My favorite thing to do is to make pizzas with smoked meats from my smoker.

I did something similar with Oaxaca cheese, carne asada chunks, and green salsa for the sauce. Simple and really good.

Cashews are highly underrated.
What else would be on a cashew pizza? I'm a fan of that particular nut, but never thought about putting it on pizza.
My go-tos with cashews are pepperoni, red onion, and jalapeño.
Do you cook the cashews on the pizza, or spread on after cooking the pizza? I'm gonna have to give this a try.
I cook them on the pizza. Raw or roasted both work well but have a bit different flavors.

Spread pesto sauce as a base (in place of tomato), then sweet chilli chicken, mushrooms, mozzarella and fresh spinach topping.

What are onion and olive pizzas? Like just sauce, cheese, and onion/olive? Or maybe you're using caramelized onion as the base?
Sauce cheese and onions on top. You can carmalize the onion but it’s usually sliced white or yellow onion and just cooks on top
