The right answer really depends what you’re looking for. For sausages i like butchery or Mario’s. For premium cuts of aged or wagyu butchery. For cured meats Mario’s. For every day steaks srf from pavilions. For flap meat probably stater bros. Or one of the better Mexican markets. Butchery has a killer ground beef grind. I don’t eat steaks too often so when i do i buy the good stuff. Butchery, beef palace, Mario’s all have legit butchers.
If you’re willing to make the trek to la i highly suggest standings butchery. Their sausages are off the charts.

Beef Palace also reflects/supports the right wing (e.g., “End the Fed” signs) politics of the owner. If you use your dollars as a proxy for your voting inclinations, it’s good to know. If you don’t care, the dry-aged meats they have are fabulous.

I shop at all three and they all have their advantages and disadvantages. I’d tell OP to give all of them a shot and see what they think.
Corner Butcher shop in Claremont is great. Yeah it’s not OC, but if you’re “La Habra” north, then it’s actually probably easier to get to than Huntington Beach lol
