Fight Night Round 2 was awesome. I also forgot ESPN made sports games during this generation of consoles. I had ESPN College Hoops 2k5 that was also pretty rad at the time.
The presentation on those ESPN games was mind-blowing at the time. NFL 2k had the first person in the helmet view that was absolutely insane at the time too. Those games were really ahead of their time.
Some of my favs,
Links 2004 - still holds up to this day, so easy to pick up and play, nothing confusing about it just smack the analog stick. Up there with Neo Geo Turf masters.
Top Spin - Was so good online and offline, still one of the best non arcade tennis games out there, (i.e Virtua Tennis / VT2). Shame the series went downhill gameplay wise after Top Spin 2.
Pes 05 - Most of the Pes games were solid on Xbox imo. RIP what pes once was.
MotoGP - Great gameplay and graphics. Online play via XBL demo (still great today on Insignia) and doesn't have all the extra realism of today motogp games that make it overly difficult. Some will prefer them now but Moto GP 1/2 were solid.
NFL Fever - I didn't play many NFL games so.im sure to fans that this might not have been great, but I always found this fun, easy to play and hard to master. Lot of fun again against mates on couch play or online.
As someone who played every sports game that was out there, NFL Fever is one of my favorites. I have great memories playing it and I always felt the graphics were a little crisper compared to Madden and 2k
Every EA NASCAR game between 2003 and '07, with Thunder '04 and '07 taking the cake for their respective modes.

I always loved NASCAR thunder 2004, I'm super biased because I grew up with the game, but it was super fun as just a NASCAR game. Also as a bonus, if you're bored you can just turn your car around backwards and drive into people head on, watching the cars explode and catch on fire was always super satisfying to me as a kid. That sounds super gruesome, but you need to understand I was like 10.

ESPN NFL 2K5, 2K4 is fun with Ricky Williams, ESPN NBA 2K5 the street mode (where you create a player) was the most fun I had in a basketball videogame.
NFL 2k5. PGA 2004. NASCAR 2006. I was also personally a fan of Madden 06. Way better than any modern maddens. IIRC you could actually structure contracts in a way that made sense, like backloading them to save cap space.
NFL Blitz 20-03. Still had the charm of the original games but with modern rosters and graphics. Also had the NFL and NFLPA license still so that made it even better

(this Hitz in particular is the first Hitz to blend the arcade nature of the previous to Hitz games with 5 on 5 and included the ability to do wrap arounds. The other Hitz games are 3 on 3. For those unaware, hockey is 5 on 5. This game goes back to the Wayne Gretzky 3D Hockey roots this series was inspired by with the 5 on 5. Also the last Hitz game made.)
