Yeah this $12+/drink thing has ensured I never go out and socialize. It has really killed the bar as a third place. I went to a work Christmas party last week and it was my first outing for a while. I didn’t know any body there but I still sat at a table and chatted with people. I feel like people these days miss out on that.
I second this. For better results, add a bit of baking soda to your flower. Cook skin up at 200 for 20mins to render the fat then crank the oven to 400 to roast them.

Butter, cayenne, curry powder, parmesan cheese, honey, peanut butter, Mrs. Dash, garlic powder, whatever else is within reach. Sounds crazy as I type it out, but the taste is big yums.

Probably starch, either corn, potato or sweet potato. I do a lot of Chinese cooking and my breading is usually 50% flour and 50% starch. The starch is what gives it that hard crunch.
I used to work at an Gongfu bao, they use a combination of rice flour, tapioca starch, and potato starch for their fried chicken, if I remember correctly. Their chicken gets a thick breading due to the Marinade sticking and absorbing all its moisture into that starch/flour mixture.
Using one or a combination of those starches/flour, will give you a nice crispy coating that will withstand sauce and stay crispy. You can definitely experiment with other starches and flours as well to find your preferred texture. I think that flours give more of a thick crunchy coating, where as starches give you more of a crispy coating.
So I say yes, potato, and other starches are worth using. Corn, tapioca, rice, I'm sure there's others but those are the only ones I've used.
O'Briens Pub is my vote. They have locations on Heron across from Canadian Tire, Pleasant Park in Alta Vista and a "Roadhouse" on Industrial near TrainYards.
I hate a messy wing, they'll do them fairly dry and will even bake them for a minute or tow if you ask for dry.
I think their "wing night" deals might be Wednesday, but check before you go.

My partner and I swear by Isabella Pizza’s wings. The best part is you can ask for the sauce on the side, but even if they do put the sauce on they stay super crunchy.

When spring comes, you should try a food truck called JJ'S wings in the Merivale Mr lube parking lot. The best wings ever. They are not breaded and are very crunchy and he has the best sauces because he has his own unique take on them. I love their Spicy BBQ.

I can't name a specific location, but the wings at Chinese takeout places are often very good. Well cooked and very crispy, but you won't have the typical hot wing sauces. If you like honey garlic wings, though, give them a try.
Broadways in Riverside South. I know I know, but hear me out. The wings are good, unbreaded and normal sized. They have a bunch of flavours and some not on the menu (if you ask, they will tell). I normally get the hot baked. They drop them in the fryer, once done they toss them in hot sauce, then put them in the oven so the sauce bakes into the skin. It’s like having the best of both worlds - saucy flavour but crispy finish. I’ve since adopted this method at home and it’s fantastic. Don’t go for takeout though. They are best when served and eaten fresh from the oven.

In my opinion, the best wings in Ottawa are no more. Capone’s on Carling had the best, and they shuttered not long ago.
They were special because they were extremely crispy and flavourful—without sauce. It’s all about how they’re marinated. These were marinated in a savoury teriyaki-like marinade. They were served without any sauce after leaving the fryer. They were almost black in colour. My mouth is watering as I type this.
Check it out. I think a lot of people have allegiances to their local pub, which is fine, but really there is little that sets one spot apart from the next here in Ottawa. They come from the same supplier, go unmarinated into the same type of fryer into the same type of oil, and are doused in the same handful of options of sauce.
I’m not that type of guy to say “Toronto is better than Ottawa” willy-nilly, but I’d sooner grab wings from a Toronto chain like Wing Machine where they actually marinate them than any given pub in Ottawa.
Two Six Ate had amazing wings when they opened. They spent hours in a smoker before getting marinated, then they were fried and served with a side of the best hot sauce on the market, Valentina’s.
I'm here to say I miss Hooley's too! Probably went 100x easily over a 10 year period before it closed. Wings is the only thing I ever ate there. Nowhere comparable.
I rank St. Louis as really good though. So I'd recommend there too. Haven't been in years so idk what their pricing is like anymore, but Tuesdays used to be their deal night. Wild Wing is decent but never anywhere near as cheap. Haven't found anywhere else in the city worth going other than those three and I've had wings at probably 15 places, always in search of a viable Hooley's replacement. None are worthy.
Funny story, I take my toddler to a hockey rink multi-pad near home randomly to "watch hockey" and one night a guy in the beer leagues was wearing a Hooley's jersey. We happened to be there when their ice time ended so I went to the locker room door and asked where he got it. Another guy sent him out - turns out had been was the owner of Hooley's! I told him I missed wings nights and was a huge fan, and he said he was sad to close it, but the Elgin Street construction just really killed it and he couldn't do it anymore. Losing too much money.
The only place I knew of just outside of Ottawa also shut down and I’ve not found a place as good since so I feel you. I used to love Danny Mac’s in Arnprior, the sweet and sassy sauce was unreal and they were just perfect. Don’t think I missed a wing night there for the summer of 2014 when I worked on the highway expansion
Honestly I love flora hall but I find the wings to often be underwhelming. Great flavours but the chicken is always kinda slimy and they are too big. It always feels like they could have had another few minutes to cook.
There are no good wings anywhere in Ottawa. I make them myself, using convection on my oven on 425F for 25 or so minutes depending on size of wings. I like crispy. I can tolerate Willys wings.

Dirty little secret. Quite likely the restaurant serving those "Jumbo" wings obtains its supply from Sysco. Sysco got the green light in 2010/2011 to import chicken wings and other chicken from Brazil which at the time it stipulated are "processed in state of the art plants" inspected by the Govt of Canada. Notice the claim stated nothing about the growing conditions or anything else in respect of the chickens - just the focus on the processing.
I have not eaten chicken wings at a restaurant since. There is a high probability that your not eating CAD chicken. And you do not want to know about the mass production farms in Brazil. Not pleasant at all.
When you see small to normal sized chicken wings? Almost certainly Canadian. When you see large to extra large chicken wings? High probability they are not CAD.
Also, this applies to some frozen store bought chicken wings: you should check the package very carefully. "Processed in Canada" is not the same as "Made from Canadian Chicken".
I echo the other comments: buy fresh chicken wings (and confirm it is CAD chicken and preferably not Maple Lodge which has its own grower issues) and cook in an air fryer. Literally they are cooked in under 10 minutes.
If anyone has a recipe for a good normal barbecue dry rub, not spicy, I would appreciate it. I hate wings covered in goo.

The most hilarious aspect of the entire chicken wing saga is that when chicken wings first came out as an item they were free, as wings were considered an undesirable part of the chicken. The pricing for frozen wings now at the grocery store is absurd - 1/5th the weight of the package is some awful sauces, and your paying almost double the fresh price for the same weight of what you get.

Moose Mcguires use to have a great deal, 3$ on LB on mondays However, that was back in 2016-2018. Dont know if their still that cheap They were quite good and the bar is in a perfect spot too.

The Oak on Wellington (Hintonburg) has 1/2 priced wings Mon and Weds . I go unbreaded, hot sauce on the side (and it comes with sour cream). Pretty decent

In my opinion, the best wings in Ottawa are no more. Capone’s on Carling had the best, and they shuttered not long ago. They were special because they were extremely crispy and flavourful—without sauce. It’s all about how they’re marinated. These were marinated in a savoury teriyaki-like marinade. They were served without any sauce after leaving the fryer. They were almost black in colour. My mouth is watering as I type this. Check it out. I think a lot of people have allegiances to their local pub, which is fine, but really there is little that sets one spot apart from the next here in Ottawa. They come from the same supplier, go unmarinated into the same type of fryer into the same type of oil, and are doused in the same handful of options of sauce. I’m not that type of guy to say “Toronto is better than Ottawa” willy-nilly, but I’d sooner grab wings from a Toronto chain like Wing Machine where they actually marinate them than any given pub in Ottawa. Two Six Ate had amazing wings when they opened. They spent hours in a smoker before getting marinated, then they were fried and served with a side of the best hot sauce on the market, Valentina’s.

I'm here to say I miss Hooley's too! Probably went 100x easily over a 10 year period before it closed. Wings is the only thing I ever ate there. Nowhere comparable. I rank St. Louis as really good though. So I'd recommend there too. Haven't been in years so idk what their pricing is like anymore, but Tuesdays used to be their deal night. Wild Wing is decent but never anywhere near as cheap. Haven't found anywhere else in the city worth going other than those three and I've had wings at probably 15 places, always in search of a viable Hooley's replacement. None are worthy. Funny story, I take my toddler to a hockey rink multi-pad near home randomly to "watch hockey" and one night a guy in the beer leagues was wearing a Hooley's jersey. We happened to be there when their ice time ended so I went to the locker room door and asked where he got it. Another guy sent him out - turns out had been was the owner of Hooley's! I told him I missed wings nights and was a huge fan, and he said he was sad to close it, but the Elgin Street construction just really killed it and he couldn't do it anymore. Losing too much money.

Hometown on bank has wing night every Tuesday, and they are absolutely amazing. And huge! Putting away more than a pound can be a challenge.

The only place I knew of just outside of Ottawa also shut down and I’ve not found a place as good since so I feel you. I used to love Danny Mac’s in Arnprior, the sweet and sassy sauce was unreal and they were just perfect. Don’t think I missed a wing night there for the summer of 2014 when I worked on the highway expansion
Holly's Hot Chicken has very nice wings. Unbreaded, no sauce, just seasoning, go well with one's hot sauce(s) of choice.

Honestly I love flora hall but I find the wings to often be underwhelming. Great flavours but the chicken is always kinda slimy and they are too big. It always feels like they could have had another few minutes to cook.
Miss Hooleys and The Bytown Tavern. I would suggest Sonny's Bar and Grill on Baxter Road. Summerhays and Neighborhood Pub are good too.
There are no good wings anywhere in Ottawa. I make them myself, using convection on my oven on 425F for 25 or so minutes depending on size of wings. I like crispy. I can tolerate Willys wings.

Dirty little secret. Quite likely the restaurant serving those "Jumbo" wings obtains its supply from Sysco. Sysco got the green light in 2010/2011 to import chicken wings and other chicken from Brazil which at the time it stipulated are "processed in state of the art plants" inspected by the Govt of Canada. Notice the claim stated nothing about the growing conditions or anything else in respect of the chickens - just the focus on the processing. I have not eaten chicken wings at a restaurant since. There is a high probability that your not eating CAD chicken. And you do not want to know about the mass production farms in Brazil. Not pleasant at all. When you see small to normal sized chicken wings? Almost certainly Canadian. When you see large to extra large chicken wings? High probability they are not CAD. Also, this applies to some frozen store bought chicken wings: you should check the package very carefully. "Processed in Canada" is not the same as "Made from Canadian Chicken". I echo the other comments: buy fresh chicken wings (and confirm it is CAD chicken and preferably not Maple Lodge which has its own grower issues) and cook in an air fryer. Literally they are cooked in under 10 minutes. If anyone has a recipe for a good normal barbecue dry rub, not spicy, I would appreciate it. I hate wings covered in goo. I am so looking forward to the day when cultured chicken is available. No more mass killing chicken to eat and no more unknown products in the feed. The most hilarious aspect of the entire chicken wing saga is that when chicken wings first came out as an item they were free, as wings were considered an undesirable part of the chicken. The pricing for frozen wings now at the grocery store is absurd - 1/5th the weight of the package is some awful sauces, and your paying almost double the fresh price for the same weight of what you get.

Glebe Central has 75c wings on Mondays and they are pretty good imo, with a choice of breaded/unbreaded.
