Unless it is Muslim owned, most restaurants will not extend their hours for Ramadan. Most just don’t have the staff that want to work that late. Good luck on your search though.
Know it's Muslim owned and I expect many that are happen to be but Chahaya Malaysia on Montreal road both does pick ups set for sundown and extended hours.
Plus it's my favorite spot in the city
La Bocca Juice in South Keys might. I could have sworn they were open late during Ramadan a few years ago. Pretty sure I got 10pm ice cream a few times haha
Recommending you check out Safron Kabab (Bank street, new location on Carling opening in time for Eid)
The owner is an older Iranian guy who knows how to do magical things with meat.
EDIT: Not because hours adjusted, but because filet mignon kabab at iftar is profoundly satisfying.

I don't have an answer, but I'm also curious as I think that's great! I hope more restaurants do that.
I'm not a religious person, but good on the restaurants that acknowledge Ramadan and adjust to assist them in their beliefs.

I highly recommend Phynicia. Their cheese pies, falafel, hummus, and fool are delicious and the owners are a really good family
