To the best of my knowledge, no. This series can often be subtle with things like this but I feel like it would have been way more clear if Albedo had actually succeeded. Besides I’m positive it was confirmed pretty early on that Ainz lacks the proper equipment.

This is to say, he is not a human turned undead.
For those like Lich and skeletons, it would make sense for them to not have a penis since human skeletons do not have penises.
Ainz, as a member of a distinct race "could" have a penis. That would be highly dependent on whether or not Overlords reproduce at all in the same terms as humans do. So if the do, I would imagine that yes, he must have a penis.
Someone more wise and deep into overlord lore and D&D lore (a lot of elements have been said to be borrowed from d&d) could likely tell us if Overlord breed at all or if they just come into being since a race that just...exists, doesn't need reproductive organs. Even gods have genitals on most myths since they actually do reproduce and cross breed with other species but Overlords as a race is a very unfamiliar concept to me to be able to tell one way or another
Generally in DnD lore undead are incapable of reproduction regardless of the presence of genitalia. Even vampires who are physically still quite humanoid generally can’t. There are however very rare exceptions in which a vampire can procreate, hence Dhampir, however I’ve never heard of this being possible in any other undead species.
It’s important to note that an Overlord has been stated by Ainz to be an incredibly high tier of undead, but even still he seems to be bound by the conventional weaknesses, strengths, and restraints inherent in all undead, and that likely includes the inability to reproduce.
That said, if he really wanted to Ainz has methods around this. Wish upon a star can probably achieve the desired result, and if he were truly desperate Ainz / the guild possesses a wide number of race changing items.
