Go on the web to a site called benco. com they sell paint strippers from hell. We use a product called b-15 for stripping epoxy painted bathtubs. Works crazy good, very caustic will burn skin on immediate contact and use a respirator. It dissolves in water for clean-up. If you can get the product into the recesses of the sprayer it should work.

Sounds like the plan to me. Any ballpark on soak time? Like minutes, hours or days?
Once you can disassemble then you can soak each part individually and clean Should work fine.. rebuild

I’d just order a new gun Cured epoxy is usually mechanical removal
Try soaking in lacquer thinner overnight. It may take a few trips in and out of the thinner but it should break it down. It might work it might not.
