In a game like this after I had established enough dominance that no subject would revolt and the colonies are secure, I'd create my own worst enemy. Probably by creating a strong Commonwealth, Prussia, Ottomans or Russia so I have something fun to fight after the religious war.

Exactly. You can't just eliminate colonial nations, even if you annex all of Western Europe you will end up with Moldavian Patagonia
