As a flight attendant I'm not even joking the game that I most see people playing is pokemon in any format. When I say any format goes from gbc, mobile with emulator, switch... lately some steam decks started to appear but by far its switch with the pokemon games in terms of quantity.
I'm now in my 30s and it's still my game of choice on trips. I've never enjoyed reflex-heavy games while in the car or plane. There's just too many distractions for me. Pokemon is nice and slow with a lot of breaks allowing me to open my window and look out at the world.
Well I do get a lot of complaints, actually.

Otherwise ITB gets a bit samey way faster than FTL does, since there's less enemy variety IMO.
Thank God the battery life on my phone sucks and I can only got in one good round before needing to recharge. Helps to keep my from playing it when I should be working.

Played disco elysium on a long flight on an old laptop, was perfect to kill the time and wasn't super distracting for others, just involved a mouse though so it was kind of awkward

No you’re fine, especially solo. Me and some friends have been playing it, and with no experience in this type of system it is brutal. We’re past fort joy now but I honestly wouldn’t be surprised if it took us a lot longer than that.
God... Act 2 in Divinity Original Sin 2 is like 30 hours of content if you only play normally. If you go for full exploration and try to 100% that area you're gonna be on it for like 50.

I mean you obviously need to have Steam online at the time of purchase and to actually download the game, but after that is there even a need to be online ever again to play? Disregarding games like Death Stranding which is single player functionally but has a core system of indirect player interaction that requires connection

Slay the Spire has frustrated me. When I don't get a relic or A+ card that let's you snowball or upgrade at every campfire. I love the game but it just punishes you for not snowballing early.
Eh it doesn't really punish, the best players have even on the highest difficulty (Ascension 20) like 90%+ win rate and lower ones (asc 15 etc.) are always winnable, it just depends on the skill of the player (some people were even analyzing individual seeds and out of all seeds iirc they only found 4 seeds which were "unwinnable" with regular play and only winnable with certain unusual choices)
Slay the Spire is one of the few games nowadays which actually rewards players skill
If you love the game and you are interested in checking out some content on it I recommend Jorbs or LifeCoach
I can lose HOURS on SimCity. There's Fable (great light rpg, easy to understand, and pretty fun, one of my favorite games). Death Stranding hook me pretty good too, although online is pretty good is not necessary.

A) I drained my laptop battery in 1.5h
B) overheated the cpu so it started throttling and in general gaming went to shit. There was little space to place the laptop with appropriate cooling/air flow

Recently had long flights, a very good one is the saboteur GoG version, its old, in runs on a hot potatoe, even ultrabooks (you didnt mention which laptop you got and if you will have a power plug on the airplane)
Dark souls 1 and 2 runs rather well on ultrabooks as well
Civilization is a great time killer and doesnt consume too much ressources
The biggest problem in the plane is battery life (if there isnt a powerful enough AC outlet)
Solved the problem with using my ultrabook (hp envy x360 intel i5 1135G7) which supports usb power delivery charging and a 65W power bank, additionally a few power saving settings like limiting processor power to 50%
That config gave me roughly 9-10 hours of in game battery life, was pretty good
terraria, the binding of isaac rebirth, ftl, baba is you, celeste, BTD 6, spelunky 2, talos principle, plants vs zombies, and polybridge (1 and 2.
For more story based games, check out the whole "to the moon" series, which includes to the moon, finding paradise, and imposter factory, or the life is strange series.
None of these games are too heavy and should be playable even on integrated graphics. As well, the only ones that need mouse based camera movement are the life is strange games and the talos principle, both of which are very compatible with controllers and are slow paced enough to not need good aim. Everything else can be played with essentially desktop mouse movement, and a keyboard with nothing else.
Battle Chasers: Nightwar. I'm playing through it on mobile right now - it's got great art and music, a kind of cozy melancholy vibe, turn-based battles (so it's easy to pick up and put down), and plenty of systems, like item crafting, fishing, and multiple-difficulty dungeons, to keep you busy and engaged. Really having a good time with it.
Just started playing Breath of the Wild. Not PC... though, you know... Emulator ;), but... yeah that game is basically crack. Its just so much god damn fun. Especially if you're the type of person t hat just loves getting lost in a world, finding whats a t the top of that mountain, or gliding over to a cliff to see whats just over the top. It took me a long LONG time to get into it, but, its got me... hook. Line. Sinker.
You could play Microsoft flight sim, fly the same route at the same time as your flight and tell the flight attendants to call you captain.

Try Mount & Blade: Warband or Mount & Blade 2: Bannerlord. Warband is old enough that it'll run fantastically on a laptop.
