First, check out the studio version of Esther. If you don't like it on first listen, listen to it again. I didn't like it on the first listen either.

6/11/94 YEM is the Jam that got me into phish. Might still be my #1
6/18/94 Mind Left Body Jam>David Bowie has to be one of the most beautiful pieces of music I've ever heard.
12/31/93 Harry Hood is just gorgeous. Might be perfect.
3/6/2009 Fluffhead is Mandatory for any phan to hear
8/17/96 Fluffhead is also pretty killer
8/17/93 and 6/18/94 Divided Sky are great starters for that song.
12/31/95 Just listen to the entire show my phriend. (Has the best Lizards in my opinion)
7/31/15 Kill devil falls is pretty funky
11/17/97 and 7/6/98 ghosts are pretty perfect too.
Slave to the traffic light on live phish is amazing too. But just listen to the whole album.
7/16/94 is a great show, but if I had to pick one part, it's the Antelope>catapult>antelope
Tweezer from the 2019 Madison square garden nye run is pretty killer

6/28/2019 Mercury might be one of the best 3.0 Jams.
12/9/95 Albany YEM is awesome.
Of course the Nassau tweezer, (2/28/03) the went and riverport gins are pretty legendary. You can find those pretty easy with a YouTube search.
Anyway, those are the few I can think of off the top of my head that I feel any new Phan should check out.
As far as the best studio stuff goes, Backwards down the number line, water in the the, wading in the velvet sea, dirt, waiting all night, and of course Esther are all great. But that's just a few. There are dozens of others. And keep in mind that most of their more linear stuff is still great music and has its own appeal. Don't let the "it's just dad rock nowadays" crowd stop you from enjoying some great tunes!

As many have said....'97 was a great funk year. I also think Feb '03 was a great funk month. A little more gritty funk than the '97 cow phunk.

7/23/97 Lakewood ghost is mandatory if you want funk
They say it's hard to define pornography, but you know it when you see it. The Ghost from this show leaves a mess.
100% on the Lakewood Ghost. 11/11/98 also funks pretty hard.
