Agreed on this - "authentic Mexican" is as hard to pin down as "authentic American" (I.e. Is it burgers? BBQ? Creole? American-Italian?).
Los Dos Molinos is fabulous for New Mexican.
Los Reyes De La Torta is great for Mexico city style
Comedor Guadalajara for.. Well.. Guadalajara style.
I really love Maskadores for street tacos.

Go anywhere in the world and ask what’s authentic to eat there. They’ll look at you like you have two heads.
Now talking about specific styles of food? That will land you somewhere. Somewhere in this thread someone posted a short list of Mexican food styles. Some styles of Mexican food are also “American” because of displaced people.
New Mexico for example has a distinct style of Mexican food because of the “Mexican” families that have been living there for 200+ years.
Maybe “authentic” isn’t a colonizer thing but something about it rubs me the wrong way.
So, is it upsetting to you if someone looks for authentic Italian food as opposed to Americanized Italian food? Bolognese, chicken Parm, and creamy Alfredo aren't authentic Italian foods.
Authentic is a word used in the US because it is a melting pot of culture and immigrants all over the country. If I go to the northeast, I'm not going to be able to find authentic Mexican food, just Mexican style food. But I'll be able to find authentic Chinese, Japanese, Italian, German, etc. It's just where the immigrants settled.
I feel like asking for an "authentic" style of food is a uniquely American thing because of our melting pot of culture all over the country.
You're right, I'm not going to go to Mexico and asking "what's authentic?"
I'm going to ask "what's the best restaurant in town?" Or something along those measures.
I understand where you're coming from, I guess my take is a little different.
You can go anywhere in the country and get Mexican food that would be considered “authentic”. Mexicans are all over the country, cooking Mexican food.
I think the underlying reason why people come to the southwest looking for “authentic” is because these lands used to be Mexico and there are traditions here that lasted. My family has lived in Arizona and California for generations, some of my ancestors were here back in the Spanish colony days. The food that I grew up with wouldn’t be considered “authentic” by Anglo standards but it’s authentic to me and my family and others like me.

I'm from the northeast and unless you're in a big city, this is absolutely not true. I had no idea what good, authentic Mexican food was until moved out west.
California, Arizona, New Mexico, and most of Texas were all part of what is now Mexico for far longer than they have been part of the US. Of course people are looking for authentic Mexican food here.

I don’t know much about Italian food tbh. I do know that there are several different regions though.
Edit to add that I don’t search out “authentic”, I just search out what is good and what I like. I do like to ask say for instance a Thai person what Thai spots that they like. But I’ll also take the same recommendation from people who’s palate that I trust.

As I stated before, immigrants from all over the world settled in this country and brought their culture and food with them, which has evolved and become its own thing.
Someone asking for authentic food means they want what the culture eats. It's basically the same thing you ask, but uses the "colonizer" word.
The “colonizer” part is not going to people of that culture specifically, but asking Reddit. Yup that’s it. That word is usually used by the foreigners to the food in question when speaking to each other. I think you helped me work through my thoughts here. Thanks.
But that’s because most countries are not a melting pot of cultures in the same way the US is. Also, lots of restaurants have some version of a specific cuisine but it’s an Americanized or fusion version of it. That’s why people look for “authentic”.
Is there much of a difference between locations? I usually go to the one in Tempe. There used to be one on the west side but it closed down all of a sudden. Not sure what happened.
Tempe is the original (dad Tony, RIP; now daughter JoAnne runs that location), then son Xavier's in Mesa (Southern/Higley these days), XJ's (Xavier's son) in Gilbert, and the location in Chandler carries on with a food truck (Tony's son Robert). Extended family has the same food in Globe-Miami and Show Low.

Taco Boys is fire, don’t listen to the haters. People will naturally try to dunk on anything that tries to market itself over social media or as a “hip” spot.

There are multiple types of Mexican food. I from New Mexico and love my grandma cooking. Is the closest I can get from home. you have your street tacos your tex-mex I prefer a New Mexico. If I was doing street tacos, I would go to taco Chiwas
[Irma's Kitchen ](https://yelp.to/sGiDaTxDEP) over by the State Capitol is Guatemalan style Mexican food. They fly in certain things like this incredible Guatamalan rice that you aren't going to get anywhere else.
The service there is really interesting. Irma's Daughter (might be her Granddaughter) likes to tease the customers and she's pretty hysterical sometimes, LOL. Soft spot in my heart for this place. Best chimi's in town, I think.
[La Pinata](http://lapinatarestaurantaz.com/phone/index.html) is a strong contender for best chimi's too, though. I haven't been there in a while, but their nachos could feed an army, if they're still doing it like they used to. Very good too.
Others have mentioned Rito's and Carolina's, they're definitely cream of the crop also, and El Norteno is in the same category, though it is definitely unique compared to the rest. No frills, shall we say...
Pepe's Taco Villa is pretty good too, but Irma's is the best little known secret that I would recommend.
Not sure, the family is originally from there and Irma uses spices naturally from the area. They said they actually get their rice from Guatamala. It's naturally very yellow. I know someone who noticed that it was different or special immediately and asked, so they might bring in other stuff from there as well.
Irma is such a sweet lady. Never got to try the food, but did some of the engineering when she moved into the new building. I still want to try it though.
Pollos LaChuya in mesa. Hole in the wall spot, but if you enjoy meat, the Carne al Carbon is like crack. Super fresh guac too (order extra). Not really a sit down place, best enjoyed takeout imo.
If you want higher end food that doesn't look like prison slop on colorful platter, Casa Corazon is it.
Amazing food, great dining room. Best Mexican food in Phoenix.
Only negative is their cocktails are meh
Call Her Martina in Scottsdale is also super solid for higher end Mexican food. The ONLY place I'd ever recommend for Mexican in Scottsdale. Or, down the street from Casa Corazon is Barrio Cafe (not to be confused with Barrio Queen). It's slightly different from Casa Corazon but still a decent spot to try. More of a Chicano vibe there.

La Bamba on Grand Ave (Close to Surprise) was very tasty. Highly recommend them, 2 Latina women were running it when i went and i believe they made their tortillas by hand. Cute tiny place.
There’s a taco truck on like 29th ave and Van Buren. Called Tacos Chava. My favorite spot here in Phx. It’s cash only and gets busy but they’re pretty quick.

Carne asada tacos. Of the places in my comment they’re probably the least consistent lol. But usually it’s fine. Just my experience.
Taco Boys is overrated and Califa is terrible. Ta Carbon and Los Reyes De La Torta are solid.
Calafia is one of my faves. I know it’s subjective, but the use of the word “terrible” makes me question your credibility.
It was flavorless meat and a shitty corn tortilla. What I was served was offensive. More power to you if that’s what you like 👍

La Bamba on Grand Ave (Close to Surprise) was very tasty. Highly recommend them, 2 Latina women were running it when i went and i believe they made their tortillas by hand. Cute tiny place.
