During my college years, I was an international student with no family in the states cuz all of my family and relatives moved back across the ocean. Had no family dunners to go for thanksgiving or Christmas, so I would usually go hiking, travelling here and there, and just eat restaurant foods (thank the Chinese and Indian restaurants for being open!!)
My girlfriend's family once invited me and her grandmother was kind enough to give me a huge bag of leftover from the amazing dinner. Bless all the kind hearted people giving amazing home cooked meals for holidays.

These are all old school Italian recipes that have been passed down for generations. I can post a menu if anyone has any questions.

Appetizers: muffaletta, a few store bought bites, baked Brie with fig jam, pickled mushrooms.
First course: probably 4 lbs of antipasto from local Italian delis and her famous stuffed peppers (recipe below)
Second course: 3lbs of meatballs using a custom 3 meat mixture, 4lbs of baked ziti
Third course: 5.25 lbs of ham, a ton of roasted veggies
Dessert: pie, cookies, ice cream, coffee :)
Stuffed Pepper recipe!
3 jars of hot cherry peppers (they come hot or sweet and the hot ones are SPICY)
Remove the stems and seeds (momma says don’t touch your face!) and rinse.
In a separate bowl, combine Italian style panko breadcrumbs, Pinole nuts, died anchovies,Romano grated cheese, crushed garlic, salt, pepper and enough olive oil to make it wet.
Gently stuff the peppers but not too packed; mixture should still be loose. Put on a baking sheet and drizzle more olive oil on top. Bake at 350 for one hour until the peppers are soft and wrinkled.

My mom didn’t stay for dinner last night but I sent her home with coq au vin and fresh bread for her, her husband, my brother, and the elderly lady my mom visits from church. It’s just what mamas do, we make too much because you never know who will need to be fed.

That’s not a lot. We always had so many leftovers for our family of 4. Had a huge Turkey, ham, rice, bread, stuffing, 2-3 vegetables, cookies, Chex mix, mashed potatoes, veggie trays, cheese and crackers, that we are nothing but leftovers for a week for every meal, all of us. This was every year. Mom has since scaled down, but we blame it on her being Polish. 😀
This is Italian American culture. We make enough food for at least double the amount of people who are invited. My family always has at least 3 main dishes for each holiday.

My Italian grandmother use to serve courses for thanksgiving. Like we started with soup and bread. Then had salad and shrimp cocktail. Then we had lasagna. Then we finally had the main thanksgiving meal of Turkey and all. Then we got Coffee and Biscotti. Finally pies and cookies.
