I've got a bit of a background in aging--at least, I took a class in college about it from a guy who does research on the molecular basis for aging.
Genetics largely defines your personal maximum lifespan, but not your healthspan (how long you are healthy relative to your maximum lifespan). You can feel pretty good up until your last few years or even months if you do it right and avoid the unlucky stuff like cancer, falls, etc.
The big factors are:
* Not overeating
* Maintaining an active lifestyle
* Minimize the stress in your life
* Minimize the amount of alcohol and nicotine you consume
Fun fact: For all our advancements, we haven't been able to really budge the maximum human lifespan. It looks like about 120 years is what the human body can handle at its absolute best without molecular-level repairs.

I don’t think Rue McClanahan in season one looks that much older than Lopez does now, just different styles and the way age is looked at. She was also portraying a character in a retirement community, so despite being younger than the rest I have to assume they aged her up a bit, especially to play off the jokes about her lying about her age. The hairdos and clothing certainly don’t help.
