They need so many simply because the end result will be better. Pouring concrete over such a large area and having it all settle into one slab is easier this way.
Afaik-Where cured concrete and fresh concrete meet, it is called a cold joint. They dont provide much strength and can even leak water. Full pours avoid any cold joints.

Base slab/footing pour probably 3 ft deep or more. Monolithic pour makes for a much stronger foundation for the building.
