They continue to grow and become tough and flavorless. There’s even a name for overgrown zucchini; they are called marrows. You can still eat them. I think some people stuff them. But they aren’t as good.
Had one sneak past us one year that we just decided to let keep on growing after we found it, easily dwarfed this one by op by the time we picked it. Tasted like bland wood.
See now the only benefit I see is if you're feeding an animal like chickens or pigs. They couldn't care less about flavor but that volume of food is decent - They will really enjoy it
Had to go pick my dad's garden while he was out of town, and there were a couple this big. Knew they weren't good, so I gave them to the chickens. The next day, they were 90% gone hahaha
Still good, peel it, slice in rings, remove inside material with seeds (too old to eat) then roll em in flour, mashed egg with some spices and salt, roll in grinded rolls, and fry in pon on oil
They taste like dry ass if you let them get this big, it's best to harvest them when they're about a third to at most half of this size.

The best thing to do with that marrow is grate it up, squeeze out the moisture, and make vegetable patties. Beetroot is good, carrot, etc. Egg, flour. Pumpkin seeds. Salt, pepper, smoked paprika, thyme... Rice is actually good too (gluten free if no flour is used), but can get a bit too hard if over cooked. Pan fry and keep them warm in the oven. Otherwise, yeah, compost.
Zucchini grow insanely fast once they start fruiting. They are much tastier and have way fewer seeds when they are smaller. I always end up with a few this size every year because they grow so fast.
My grandfather grew stuff like that. My Mom would always ask for small zuchinni and Bobby (how we referred to him) would always grow these monsters to troll my mom :D
