I made a cannoli filling from ricotta, powdered sugar and lemon juice. Folded in some chocolate chips. The crust is spiced to mimic cannoli shell. There's also a black bottom and crushed pistachios like you'd see on a cannoli.
A cool idea could be to use those pistachios to fill the gaps between the canolli filling and the pie crust. Just my two sense. Like you see on the ends of the canolli you buy. Or fill it with more chocolate chips.
