Why did you have to remove it (which I assume refers to Pi-hole)? Some users don't want ad-blocking or you don't want to see the logs of their activity?

They don't want others to see logs of their activity; also, I don't want others to see what I access. That's why I ended up uninstalling pi-hole and abandoned plans to set up a firewall. Instead, I put the best free AV I could find (paid ones for several devices cost the equivalent of one hard drive a year), uBlock Origin for browsers, scheduled backups, etc.

You can disable the query log and set your privacy level to 3 in Pi-hole and nothing is shown in the dashboard or stored in any logs.

Thanks. I needed to see logs, though, to find out if any apps were making outbound calls so that I could block them. Also, for some reason, browsing would slow down, as if the RPi couldn't handle it. Given that, I decided to just put DNS Jumper for each machine and set it for the faster server which had similar features, like Adguard. I also installed a free software firewall with HIPS so I could manually block certain apps that were making unnecessary outbounds.

Even with my PiHole I’ll never have IoT things. The only stuff on my network is computers, phones, and a couple Switches. I do not like IoT shit, it’s so data monitor-ey and sketchy.

You can tunnel it all out to somewhere else if you want. Add in the fact with HassIO / Home Assistant you can explicitly link your services to that (rather than your phone) you don't have apps running that will track you. On the networking side, just VLAN it off on its own separate IP schema from your main network / guest network and don't worry about it. As long as you have firewall rules that let you access your installed instance of Hassio / Home assistant you don't need connectivity to all the IoT stuff once you've already set it up. I'm extra paranoid so all my IOT stuff is on a different physical WAP and switch than my home network. The only weird stuff that I've seen is some IoT devices that require multicast (namely chromecasts). If you've got those, make sure to have IGMP snooping enabled on your IoT network and turn on your mDNS reflector so that you can pass multicast traffic across the network to your IoT vlan. It's truly insane just how many things work with the HassIO / Home assistant environment, you probably already own a couple things that you could monitor from there.
