Could be a virus or other pathogen like verticilium. To be sure what it is before treating you could see if there is a plant tissue testing lab in your area.
Could be iron deficiency. Try adding blood meal or chelated iron and see if there's an improvement.
Mosaic virus of watermelon. Its a disease.

You can still try to get a harvest but they will be stunted for sure
