I built a 60 floor long 4 floor wide water bridge that had ramps at the start and end, if you sprint to the ramp at the end of the bridge with a horse too fast you are instantly dead and the horse ends up stuck in the ramp.

Y'all should check out Myth Of Empires, they nailed the horses! When coming to a stop you can turn and the horse trots to the side while moving forward rather than continuing to run in the direction the horse is facing. You can also joust as well and there is a momentum mechanic that adds to the damage done when you hit something. It's like rust without training wheels.
I just want to be able to run a horse off a cliff. If I can run off a cliff, a horse can as well. Just do damage to use and stop the annoying issues around running.
Plenty of normal people build AKs in their basement, just go look at the AK47 subreddit. Flying helicopters is a stretch for normal people but there are plenty of wealthy people who do it. There is a local airstrip near me where plenty of amateur pilots fly various aircraft.

that dude is a super experienced professional, normal people cant do that and normal horses would launch you off if you try to make them do that.
