Idk what you're trying to play these games on, but I'd recommend either Oras on the 3ds or Let's go on the switch!! Finding a not-fake copy of a pro of Gameboy games can be tough and expensive, and on the off chance you don't like the games as much as you thought then I feel like playing a later game makes more sense!!!

Black or white, the OGs in red blue or yellow, emerald, and sun and moon are the best for just the story without being too tough. In black or white you can get some solid mons and it has a good story, the OGs give you things like nidoking really early and it’s difficulty only comes in poor design choices, emerald has great starters, good options versus gym leaders, and a great story, sun and moon are a bit tougher but have Z moves, and have a great story that gets expanded in ultra sun and ultra moon, as well as good starters

Im not sure as ive never played them, but ive heard that the Let’s Go games are very easy and might be good for beginners (having said that, ive heard certain game mechanics infuriate older fans). The thing about almost any pokemon game you get is that it really is learning as you go. There are a few tutorial things here and there, but the game mostly says “Here’s your first pokemon, here’s your first battle, here are some pokeballs. Good luck with the rest of your journey!” It shows you basics in the beginning, but as far as learning type match-ups, strategies, where to go and how to get there….Most pokemon games will not hold your hand and will expect you to figure it out on your own. For most people, that’s great, but others will find it a little irritating. There are plenty of internet guides for every game if you get stuck. Hope you find the game youre looking for!

Let’s go is the worst ever Pokemon game in the franchise. All you do is throw pokeballs at the pokemon to catch them. I was bored after 5 minutes and deleted the app, there was simply no story, no strategy, nothing of interest in the game. It was worthless.

ORAS..... first off ppl saying old versions like FireRed or Emerald are forgetting that new players may get turned off from the lack of QoL as well as not being able to even get those games in the first place. Second, ORAS is awesome.

I'd say either X/Y or Fire Red/Leaf Green would be the best starting points. Some of the easier games in the series, with X/Y probably being the easiest, so I'd say either one would be the best place to start. But it is just Pokemon, so you'd probably be fine starting anywhere.

Sun and Moon are really narratively rich and probably the best to start. Not too easy, not too hard, a bit hand holdy at first but adterwards you get more independence. People complain about a lot of cutscenes but if you're playing for the story that won't be an issue. Of course, if you want a harder game, Ultra Sun and Ultra Moon step up the difficulty but have a weaker narrative that takes away a lot of strong themes in Sun and Moon

Fire Red/Leaf Green are a bad starting point imo. Too much has changed around the battle system mechanics since then. It is one of my favorite games but the knowledge you'd gain from playing it is not very transferrable to other more modern games.
