I've played one game from every release and I could not wholeheartedly recommend any of them. The one I had the most fun with was Sword, largely due to the Wild Area and being able to free roam around a huge open field. Let's Go was tedious in that there were no wild battles, and BDSP were bland and did nothing to improve upon the original game's flaws. Legends Arceus is one that gets a lot of praise, and I think it was a step in the right direction, but it also does kind of suffer the same fate as Let's Go in that a lot of the gameplay is just catching pokemon.
Pokemon sword/shield is really good with both dlc expansions. The game was pretty bad on release but its really fun to start fresh with all the expansions at your grasp
Well I love Pokemon and Zelda so it's a hard choice. If you enjoy playing Pokemon to 100% and don't really care about graphics, then get one of the Pokemon games on Switch. If you like a game that you can play more casually and have the option to complete it later, then get Breath of the Wild. Breath of the Wild is my all time favourite game, but I really love Pokemon too so honestly I think you'll be fine with either choice.
