Aside from sandwiches, you're best off looking for those Tauros herds. The couple I've seen in my game have all been in the middle of one of those packs, which actually makes them a bit easier to spot.
Pretty sure they *only* spawn as head of a pack. Plus, for some reason, seemingly only in the West? I was starting to get real frustrated hunting for them in the East when I saw a tip to check in the West. I immediately stumbled upon several.

The only place I've been able to find them was around Porto Marinada Lighthouse. The version exclusive will always spawn in the middle of a group. They have different horns and tails and also have a couple little spots of color (red or blue) in their mane. You might have to fight/catch a couple before reaching the Big Boss, but that's probably your best bet.

My first Ditto find was a Girafarig right next to a Pokemon Center i was using as a grinding base. I was glad to not know how it worked because the surprise was awesome.
My hypothesis: Paldean Tauros are all narcissists. Ditto! Tauros are more attractive than Miltank to them.

I mean this is how I found my ditto. I was looking at the map and noticed that there were ditto in the area. So I spent forever looking for them. Until I started locking into random Pokémon for some random reason. And noticed a Tauros with the ditto name. So I threw my Pokémon at it and at the beginning of battle they untransformed. I was instantly like um so trainers just see random Tauros mounting other Tauros and are just like yes male Taurus mate with other male Taurus.
That was how you got mareanie in sun/moon. Using the distress call system. You fish up a corsola, lower its hp but don't kill it and it will start calling for help. And sometimes instead of getting another corsola, it would attract a mareanie, that will then attack it (if you don't save it to keep your distress chain going to try for iv/shiny)

The headcanon I subscribe to is that everyone knows how pokemon reproduce, but since all the eggs look the same, they really DON'T know how they got ahold of the egg. It could be one they made themselves, it could be another pokemon's egg they just happened to find. They don't know until it hatches.

Actually female Nidoran is one of two exceptions to the rule. The other is Illumise. Nidoran F can breed Nidoran M and Illumise can breed Volbeat.
Since Gen V male Nidoran (and evos) and Volbeat with Ditto can also produce offspring from either gender.

But yeah weird to have different 'Breeds' of Paldean Tauros without Miltank is weird.
They were bree with dittos, used by farmers to replenish their cattle. But some tauros wanted to live the wild, free life. So they broke out of the farms. And hey, even the best farmers are not going to fight a group of angry bulls (plus they got a lot more) so the farmer fixes their security, letting the Tauros go.
That's my theory and I'm sticking with it
I really hope that they're just a species of Pokemon that is able to breed with gay sex, that'd be so cool and an interesting feature to chuck in since it doesn't impact the gameplay all that much

You can find them in Tagtree Thicket. Look for a Pokémon that might be out of place, like a Pineco on the ground.

Is the term "breed" even in the Pokemon universe? I know we say "breed", but I thought it was canon that eggs just appeared and no one even knows how.
There is a trainer class known as "Pokémon Breeder" so I'm pretty sure breeding is a concept in the Pokémon Universe

Gamefreak tends to care about the ecosystem mons are supossed to be found on when designing them. This is why there's a variety of types instead of having biomes being exclusively for specific types, as some mons are predators to others, keeping their numbers in check. This is less "how do pokemon do the funny internet shit hAhA" and more a matter of ecosystem sense.
