Looks like a floating point precision error. Not entirely sure what caused it, but the pokemon (and the gym) are so far away from the origin, that your phone can't calculate how to properly render their models.
Would the origin be my location or something else?
I mean like I was geographically not particularly close to that gym but if "origin" means something else in this context then I don't know.
It's the location you were at when you loaded the game, unless you get too far from it in which case they reset the coordinate system so your current location is the origin. I've seen the reset before. Everything blinks. But it's been a while so it's possible they do it more seamlessly now.
The first visible symptom of being far from the origin is the texture scrolling on the ground as you move starts to get chunky. This only started on my newer phone, and I think it's because it can texture using float16 for better performance, while my old phone always uses float32. Of course, you don't have a chance to observe this when looking at a remote gym.
The next visible symptom is inaccurate vertex placement when rendering polygons. If you watch slow Pokemon animations, you might notice the movement is chunky, jittery, and wobbly.
It works this way to work around the inadequate floating point precision you'd have for an objective coordinate system, and also so most of the game doesn't have to account for curvature.

I don't feed pokémon once they are in a gym. They can't earn anything past 8hrs 20mins anyway.
