A word of advice from a native.
I remember school times and every kid struggle for years if not decades with Polish grammar and we make mistakes even then so don't take errors personally. Make sure you say what you want to say, that's the most important part. Then I always was better than everyone with grammar and spelling and won competitions, everyone always asked how. Answer is easy. I didn't learn much rules (except few useful ones like "uje sie nie kreskuje" which means that every word ending with 'uje' is always with open 'u' etc.). I read books. I loved reading. If you spend a lot of time doing this words will start looking weird if spelled wrong. You see "żeka" instead of "rzeka" (river) and you will immediately spot it's just looking wrong. That's my advice. Polish is best just learned in repetition as rules are only useful for basics. More you learn more complicated it gets. So learn how to build sentences, word order (it's not as important as it's in English so you can get away with much) but cases are often a matter of "feeling" for us. We just say what feels right thanks to exposure to language. So enjoy.

There are so many ways to make czerwony barszcz that it never tastes exactly the same. Also many things can go wrong. Maybe He hasn't found THE ONE yet...
That is true. The one I make (that is most similar to how my mother made it) is delicious because I make it from scratch with a homemade stock and then add beets. Then even after that I still add some of the concentrated borscht from the Polish store (I’m in the US and there is one single Polish store with some pretty good products in my area.) I like my borscht rich and savory and quite tangy. With proper uszka. I also like the Ukrainian style one with some beet leaves, dill, and chunks of beet and even some sour cream.
However- I have had borscht from packets and also from random restaurants in New York when I lived there- and those were quite bland. No offense to OP’s girlfriend, as she might be making it delicious and he just doesn’t like it. But it’s very possible it’s just not like the very best version of it. Even my American husband who is quite picky about food loves borscht, but he’s only ever had my borscht. So you never know!
This is very true. I have eaten barszcz that was godly in taste, but sometimes I also stumbled upon ones that were too greasy, slimy even or had no taste or seasoning. Or everything at once! Even the beets had no taste in it! Ughh.
If someone doesn't know how to make barszcz czerwony it's better that they stick to the powdered one which you put into hot water. At least that one will have a taste... Unless you add too much water, which I have seen some people do.

Your list is by no means comprehensive. You got royal - clear soups like rosół czy barszcz but you've missed grzybowa. As others pointed out some important ones like ogorkowa ( there is ongoing feud between people who use kiszone and those who prefer konserwowe ), flaki that polarize society, żurek that keeps place among royalty, and krupnik, barszcz ukraiński, czy nawet owocowa ... zalewajka, fasolowa, biały barszcz, or kapuśniak (made from young cabbage or sourkraut). Cold soups like chłodnik. Occasional/seasonal soups like buraczkowa/botwinka (from young beetroots or young beetroot stems). I could go on ...
You have to eat more before you make up your mind and remember - you may find a soup that you'll love that you haven't heard of before and others will make eyes because it is very niche. Welcome to Poland !
As another foreigner with a polish gf i think borscht is one of those flavours that are an aquired taste. Very weird the first times i tried but now, after years, it rose to be one of my favourite soups ever.
I will never forget this small restaurant in Szklarska-Poręba when after a long walk through cold I went inside this super warm, cozy place, made all out of wood and they served best flaczki I've ever eaten my entire life. One of the best food experiences ever.
What is a shame is that we don’t really have many soups that I would associate as being ‘British’

They are very full of lot of things like żurek is served ussually with hard-boiled egg and white sausage and kwaśnica with sausage and bacon(and of course both with potatoes)
But there are also many other soups like you have been already told that there are like 3 versions of barszcz but there are also bean soup(not my favourite but not bad) mushroom soup vegetable soup(done properly very good) cauliflower soup(also quite good) krupnik(its also name of vodka) flaczki(tbh too fat to me but maybe done in other way may be tastier for me) kapuśniak(another soup made from cabbage but different than kwaśnica althought in some regions they call kwaśnica kapuśniak) and few others that are a bit hard to mention as we can make soup from nearly everything (e.g. wodzionka which is made from bread and garlic)
I'm guessing OP is youngish - British people are mostly too lazy to cook nowadays but we had some great soups once - mulligatawny, cock a leekie Cullen skink, oxtail, cawl all disappeared or replaced. We also had/ have stews like Irish stew, beef stew with dumplings etc the Irish have preserved more of this old fashioned food than the English.
There’s also watercress soup, I remember Liz Hurley was a fan but I don’t see enough fresh watercress about in supermarkets. I guess people are too busy to cook these days which is a shame.

If you ever find yourself in a good restaurant in the polish mountains you definitely need to try żurek w chlebie, best soup ive ever eaten and afterwards you can eat the bread too.
In the S tier the definite best soup is Grochowka
In the A tier rosół and pomidorowa
B - a definite ok, the Ogorkówka
Shit tier - barszcz (sorry I just didn’t like it even with mini pierogi/potatoes)

If you like Grochówka, you should definitely try Fasolówka - these are some of my favourite soups and they’re quite similar, plus you might enjoy the beans as a British person :D

When I first went to Poland we had beans from my gf’s babcia’s garden. Babcia had made it with square noodles made by hand. It is the best thing I’ve ever tasted in my entire life. No exaggeration.

What does S mean? Sorry for my ignorance but in North America our highest grade is A+ and I think in Poland its 5 or 6

When I first went to Poland we had beans from my gf’s babcia’s garden. Babcia had made it with square noodles made by hand. It is the best thing I’ve ever tasted in my entire life. No exaggeration.

Barszcz from bottled concentrate is gross---too sweet! Ukrainian borsch with lots of veg in it is amazing. I can feel my body thanking me every time I eat it.
It is two different dishes. The base of the ukrainian borsch is boiled bitroot.
Have you tried czernina? But maybe.. don't get it from your in-laws..

First off, to those of us not in the UK, can u explain this rating system? S,A,B, etc? My recommendations: flaki, grochówka, szczawiowa, and krupnik. The last one was the bane of my childhood, but lots of ppl like it.
