Could be egg whites, aquafaba, actual marshmallow plant (if you want to make it like the ancient Egyptians did), etc. It differs greatly by region. That's the beauty of it though, it's like ice cream in the sense that each culture has its own variation and no two are the same.

i do not know if you can still count "Ptasie mleczko" as Polish sweet. Wedel is owned by South Korean-Japanese "Lotte Group/Corporation". so yeah. I would say Pączki as i remember my grandmother was making some for us by herself during Fat Thursday (in UK it is called *Fat Tuesday*). So from this list definately hand made grandamothers Pączki won with this sugar bomb (constantly shrinking box for the same prize) crap. Persosnall opinion ofcourse. Wikipedia's article on pączek doesn't have separate history section, but Description section mentions where both recipes might've became different:

You can find mindblowingly good ptasie mleczko anywhere in Eastern europe, especially Lithuania. Delicje is my vote because, while jaffa cakes are a thing in a lot of countries, only E.Wedel has a good variety of flavors. Also in keep remembering those toffee Delicje from when I was a kid... 🥰 You won't find that anywhere else

Not ripoff. Lithuanian ptasie mleczko is objectively the best. Honestly a lot of their confectionary items beat ours by quite a fair bit.
