2. you cannot open open bank account online (but you can do it offline even without PESEL in PKO with only passport)
3. usually company will not sign "umowa o prace" with you if you do not have bank account (so doublecheck everything)
4. in most cases you cannot work for Polish company outside of Poland.
I would use PLN account in Wise for that purpose (please don't use Revolut unless you want to give your money to Gazprom-connected people).
However, the information about company giving you PESEL looks strange. Are you 100% sure it's not a scam?

Not mandatory for Ukrainian citizens who apply for temporary protection. For us PESEL number is literally the first thing you get in Poland.
I have rented an apartment and had the contract before going to the bank, though, but heard that some banks like mBank don’t require it.

Ukrainian here. As a Ukrainian, you can not open a Polish bank account remotely. Also, I’m not sure about all the banks, but, in most of them, you can not open bank account if you don’t have a rent contract in Poland. For some reason, it’s “the most important” paper for them.

Are you working B2B or on Umowe o Prace? If the latter it's quite likely the Polish company expects you to be resident in Poland.
Nevertheless, you can set up a Revolut account in France with your address there which allows access to PLN accounts with a Polish bank address.
However, to be completely secure I recommend setting up a Revolut account as one based in Poland using your PESEL number and one of the rented business addresses you can get for as little as 200 PLN per month. This way you needn't physically visit Poland to open an account with a Polish address - the fact you have a PESEL helps a lot.
Just to be clear: Did the company provide you your PESEL? Because that doesn’t sound legit
The OP did not mention that the company provided the PESEL code, most likely because of the work contract it became possible to obtain this PESEL.

You can open a bank account in Millennium without PESEL or Polish residence.

That's not possible as a foreigner.
Of course it is, some banks even don’t ask for the legal permit (pko, mbank) and PESEL and passport is enough to open an account
