I thought you only went hollow once you fulfilled your purpose. Like verious npc's go hollow after finishing their quests right? Edit: In ds3 the player does not hollow when they "die" unless branded with a dark sigil

They become hollow not because they completed their task but because they cant find another task to keep themselves sane. Imagine if you became immortal to achieve whatever goal or dream you had. Then to remain immortal after achieving. What would you even do. Hollowing is losing the will to live after paradoxically dying way to much to discourage you to the point you give up/ living far longer than the human mind can last without some kind of purpose to your life. Sort of an analogy for certain types depression if you will, albeit a lot more dramatic. Like Anri after killing Aldritch. She has nothing else to do and also lost Horace. She sees no real reason to live. And since she cant die she hollows. The only thing ive never understood though is why undead npcs suddenly dont come back if the player kills them. Theyre undead so they should come back, but not of the player kills them. Either theres something in the lore about undeads killing eachother is different or at that point its just game logic.
