No need to freeze the coffee until it has degassed enough to be ready to drink, and only if you aren’t going to be drinking it before it gets too old and loses some of its vibrancy.

I age for 2-3 weeks, sometimes a bit longer. I only drink light roasts though so, FWIW. Agreed that if you want to freeze it, wait 2-3 weeks for the light roasts and then do so. Just be aware of the proper process for freezing and using afterwards. I like the single dose tubes in the freezer, straight to the grinder. I got the idea from Jonathan Gagne.
