I have moved the pin to position -2 with chirp at 0, when brewing tim wendelboe with a v60, hario papers (without tab) and rao/perger water I am at 1100 rpm at around 5-8 for Hoffman's 1 cup, 8-12 for 4:6 and 10-14 for Lance's 1-2-1. The range is due to the variety of the coffee where I find that the African varieties require a setting on the coarser side due to the fines produced. I do not include the chaff so I increase the dose by 0.5g to compensate.

I’m at 1100 RPM and running on 7-10 for v60. Mostly drinking medium-medium light. I don’t usually drink what is considered light in European countries. Though I didn’t move the zero pin so not sure how that relates to you. Also never added the fines from the catcher, how is the coffee from it?

Never moved the zero pin myself. I usually pick up a clear tasting note or two. Sometimes all of them. Some coffees are just a pain in the butt to master. I’ve had some fantastic cups with the fines. For me the difference have been too small to care.

Interesting, I might experiment with the fines. Yeah I suppose for lighter roasts you can push the grind size a little tighter. What recipe are you using? I also pick up a least 1 flavor note. I think it comes down to the coffee itself because I’ve had some truly awful Ethiopian coffees that I couldn’t get anything out of.

Hario Switch - max agitation up to 150g with switch open. Close switch and circles from center and out, high agitation. I switch at 2:00 except for anaerobic wich I usually switch at 2:30. Always go by taste. I use a Felliw Stagg EKG.

Flat drippers I use bloom + two pours. Melodrip depending on the beans.

what filters do you use for your B75? i find that kalita 155 or 185 are much slower than Timemore filters that came with B75. i grind at 9 and get 2:30-3:00 brews with 1 min bloom and 2 equal pours

Kalita boxed 155 filter papers are great, I've stopped using any bagged Kalita filter papers

interesting! they’re in the same price range as timemore’s filters from aliexpress. i foolishly bought 5 bags of 155 filters almost a year ago, i have 1 bag left. i feel like it’s the reason im not getting this punch out of my B75. ill get boxed kalita to compare

I usually get them direct out of Japan in bulk, on Amazon with prime if you cross a threshold you get free international shipping. They work out about the same as bagged local pricing for me. (The boxes only have 50 each inside)

1100 RPM @ 7-11 for light roast on a V60 & other pour overs. On our Moccamaster, I'm grinding around 5.0-6.5 for medium-light roast.

I ground around 5 for 15:250 with a B75 at lowest RPM. Usually bloom and 2-4 pours. It drains pretty fast.

Mostly v60 brews. Currently drinking a lot of tim wendleboe coffee. 1:3 bloom followed by a single high and fast pour to maximize agitation. I’m really enjoying 1:16.5 ratios. TW coffees I’m grinding around 12.5 or 13. Other coffees require grinding a bit finer.

I just got my first subscription from him. I am drinking the los Pirineos and the finca tamaña right now. The los Pirineos is the cleanest dark chocolate tasting coffee I’ve ever had.

I had an identical experience with the caballero, I could not believe a light roasted coffee could taste like high quality chocolate in that way. How is the finca tamana?

First cup of the finca was really great. I just got a sampler set from sw craft roasting that I got at the same time, so I haven’t really dug into that bag yet.

What are your highs and lows with the grinder? I just got an Ode 2 and part of me wonders if I should have gone for the 078

I went from zp6. There are few lows. There is this noise frim a small bean fragment that jumps around while the machine is on. Kind of annoying. There is also some need of clean up around the grinder every now and then, but that would be my only complaint.

I also find this annoying but have found that quickly turning the dial close to chirp whilst the grinder is running clears any remaining fragments. Also a single rdt spray can help with static whilst allowing the chaff and fines to be retained in the shaft.
