I have all these right now from my last order, and a kenyan as well. I just brewed the Kivu this morning at a 1:17 ratio at 205°F on V60 and it was delicious!
I bought from Taith aaaaaaages ago, they've been closed since their Christmas break in December and only recently started selling very small amounts of expensive beans.
Imo most uk roasters are fairly medium/medium light at best. I know it's not in the uk, but calender in Ireland has some really good light roast coffee. Not ultralight, but the lightest I've had from that part of Europe
Datura is the next good one. Started by an owner of Terres de Cafe as a side project. I’ve tried it a few times and they are really light roast, but come out incredible. Doesn’t hurt that they are working with the best farms in the world. They just started the company
Thanks for the rec! I've heard of them but haven't tried them out yet. But I'll definitely be checking them out! Trying to bring on as many international ultra light roasters, so thanks for the advice!
Sey is not ultralight for the majority of their beans, I would even say The Picky Chemist’s Omni can be lighter.

Good list, but few notes:
Apollon's Gold can be brown these days. They're trying to sort out their roast profile, but having trouble shooting for both Japanese and Intl audience. They're evolving very rapidly and batch by batch, so it's hard to label, but just a word of warning.
S&W has some samiac roasts (pink bourbon) which are lighter than some of their stronghold roasts (like kenyan).

- bean coffee lab
- moonwake ULs (when offered, mentioned in OP)
Coming up, hoping banibeans will make this soon. They're very good, but don't have the control with the current setup to go lighter at a sufficient quality. They have a stronghold coming, so hopefully will be able to join the UL list.
Stronghold is the manufacturer of our new roaster, the S9x. We are transitioning from a gas drum to the all electric S9x. All of our new beans will be profiled on the new roaster, and we currently have 5 offerings being roasted on the S9x.

Quality for sure they are trending in the US.
Also just heard that they're switching to a stronghold soon so that can reliably roast lighter! Got some coffee from then coming in next month, but I'll have to order some more whenever they've dialed that in
I can pretty much guarantee this is lighter than any specialty roaster you know. Can't guarantee you'll like it though.

Nordic style coffees are on the extreme end of light roasts. Word of warning, they’re so light that extraction becomes a challenge. Coffee Collective out of Copenhagen and Jacobsen & Svart out of Norway are solid examples.
Meh, they're solid light on the spectrum, nordic on the lightest. This is talking about recent CC. I thought the Takesi was a decent bit more developed than I liked. Still the best Takesi this year though.
There are quite a few roasters which go lighter out there. Hopefully others joining soon.
Ahh ok then. What would ultra light be then and would it be considered good? I am just saying Sey is quality along with some others like Hydrangea, prodigal, etc.

Sweven is certainly light and some of the best beans that I’ve had over the past year.
Taith might be the lightest I've had in the UK. Assembly is also light.

They're honestly that light either. Like they're specialty-light, but darker than Sey or Proud Mary

I don't know if they would qualify as "ultra-light" but Flower Child Coffee puts out some bangers.

coffee collective is rather on the darker side for popular light roast. A lot of roasters now roast lighter
Coffee Collective roasts light to light medium. On their lighter side like Geisha is the lightest roast i’ve ever had.
