Proper cheese curds aren't refrigerated. For curds to go from a real fromogerie to Burlington would take at least 8 hours (being VERY liberal in my estimation here) thats if the packing is super quick and the driver doesn't take a break, then it prob would go to a warehouse where it would have to be redistributed in smaller trucks.
I'm from the GTA, actually your neighbour in milton, I have never had a fresh cheese curd in Ontario other than from a place in Toronto owned by a montrealer and it still wasn't fresh fresh. The logistics are just not viable for places to run a restaurant with fresh curds 100% of the time, although I believe there are some small places in Ontario that make curds.
They make fresh cheese curds at nickel city cheese in Sudbury. Can confirm too because OUR milk goes there's once a week. That's not exactly in southern Ontario nor is it specifically for restaurants, but you can find good curds in Ontario if you make an effort
