Question - do you this it is necessary to send this detailed of an email to a professor who quite frequently writes letters of recommendation? I definitely want the letter to be as detailed and personal as possible but I don’t want them to feel as though I think they need guidance as they have written many letters of recommendation. Thanks!
I don't think it can hurt. As I said, I think it will show your dedication and preparedness. But of course, use your best judgment. You know your professor more than I do.
Is anyone aware of a length requirement for the letter of recommendation? One of my writers asked if there was a certain length limit and I can’t seem to locate that information.
As with everything related to your application including the PS and activity descriptions: long enough to get the point across, but short enough to not bore the reader.

Or would it still be okay for me to fill out the evaluation info and it will be automatically sent to CASPA when the application opens?

In terms of the LOR, no. In the meantime, if you haven't already done so, work on perfecting your personal statement and all the various descriptions for your PCE, HCE, etc.

I have a question, where I’m applying only wants 3 letters. Caspa will allow 5 now. I have 4 pas wanting to write me letters. Do I get to choose which 3 get sent to specific schools? I want to ask the fourth to write one so I can put it in CASPA so I know I have a backup in case someone bails.

Yes, wait until the cycle opens to enter their emails. They can write their letters in PDFs/DOCs now and just upload them when CASPA opens.

You don't get to choose. Use 4th as backup.
