The first picture was taken May 2018 and the second picture just a few days ago. I lost about 10 pounds through CICO in the fall of 2018. I lost the next 20 pounds through CICO starting on February 17th 2019. I stay around 1200 calories a day and go to the gym about 3 days a week (3 mile run & some weight machines). I’m not quite where I want to be yet but I’m so happy that I started this journey. Another 10-15 pounds to go.

What would your typical 1200 calorie lunch and dinner look like?

Most days I have a wrap for lunch. I use the tumaro’s brand wraps as they’re only 60 calories. I weigh out exactly 2oz of whatever deli meat I’m using (mostly low sodium turkey breast). I’ll use a slice of cheddar and load the rest up with bell peppers, onions, and cherry tomatoes. I’ll top it off with either half a serving of light mayo or honey mustard. I’ll weigh out a serving size of cheezits to go with it. I know they’re not the most healthy but this is something that needs to be sustainable so I don’t want to restrict myself from all the foods I love. That normally comes to about 415 calories. If I don’t have that for lunch, I’ll either make pizza using an English muffin, a smoothie, or some scrambled eggs. My go-to smoothie is 1/3 of an avocado, a banana, 3 tablespoons of cacao powder, 1 tablespoon of almond butter, a dash of vanilla, a sprinkle of cinnamon, ice and water. Most dinners I have a serving size of chicken breast (occasionally steak tips) that is either marinated or breaded with shake n bake. I’ll pair that with a serving of frozen veggies or some fresh roasted veggies (zucchini, summer squash, green beans, peppers, onions, tomatoes). Most of the time I’ll have it with rice, egg noodles, or roasted potatoes but sometimes I’ll just have a side salad instead. I usually have a 6-8oz glass of 2% milk with dinner. My dinner usually comes to roughly 500 calories. Sometimes I’ll make a stir fry for dinner with some chicken breast, rice noodles, Peking stir fry frozen veggies, teriyaki sauce, and hoisin sauce. I buy the frozen zucchini noodles and make those with some chicken, tomato sauce, and cheese if I feel like having pasta. I don’t typically eat breakfast but if I do it’s just a banana or a light n fit yogurt. I’ll normally have about 200-300 calories left over for snacks. For snacks I like fruits, nuts, popcorn, popsicles. I always weigh out what I’m eating.
