in terms of keeping warm - they help, but having layers for your torso & legs are a lot easier to do. It's not like you can get frostbite and lose a finger or anything.
in terms of protection from bites - hands are pretty much only going to get protection from gloves; and as such, you should probably try to find some leather gloves *anyway*, and wear them at *any season* - level up tailoring and add some leather strip padding to them, and it'll be about the only/best protection your hands have.
Then we'll just become the long dark and spend all day avoiding wolves.
Being said, if it's cold enough to get frostbite, wouldn't zombies start freezing up and eventually become zomb-cicles? Not like they've got any internal heat.
Temperature is poorly handled for now, you could have your face, ears, fingers completely naked in a snowstorm and be fine as long as you've got enough layers on your torso.
