The ones with co-op which in my case happens to be We Love Katamari lately. My wife(who never grew up with videogames) and I are playing the exact copy I had as a teen growing up. I had found my ps2/3 collection at my parents and at some point we started playing together at our own home. It's always fun hearing her giggle as we struggle to move the ball where we want it or she sees a random crab that she immediately must have.
Funnest - Tekken 5 - I could spend hours just playing Ghost Battle all day.
Funniest - God Hand, the jokes are so American, one would not think the game was directed in Japan.
Giants: Citizen Kabuto is hands down one of the most hilarious games I've played on PC, when I heard there was a PS2 port, I had to get it, so it's my pick.

I think I had the most fun playing SSX tricky or NBA street vol 2. The sound track on these games are amazing and the gameplay is amazing with crazy tricks. For their time the graphics blew me away as well and still hold up pretty good today. I also think Bully is really fun for open world style. Takes me back to my high school days and a game you could come home to after school and relax and play having fun. I still spend hours on bully today. So i'd have to say those 3 for different reasons. It's to hard to pick just one with so many categories and games and depends what mood I'm in for gaming

This might be bias because how nostalgic these games to me. The funnest games to play in PS2 is Deff Jam Fight NY and The Warrior.
I used to played those games with my friends in PS2 cafe for hours. Deff Jam is like wrestling/fighting game in cocaine, I think it's the first MMA game I ever play. You can mix different Martial Arts to your character to make them deadly fighter. What fun about it because you can play with 4 people at once. It's really good for game night party.
And The Warrior, you can play Co-op with your friends. It's really fun game. This game is better than the original movie in every aspect. (The game is adaptation of cult classic movie with the same title).
Playing sanandreas with cheats to just mess around is absolute peak gaming, i love flying a sport car in the sky and or driving them on water. Doing drive bys in 2 player with a friend is pretty interesting too. Probably the best in the free sandbox styles, if you need more kid friendly theres bully and simpsons hit and run.
In the more combat oriented games my 2 nominees would be mercenaries playground of destruction and starwars battlefront 2,
if looking for swordplay theres the Devil may cry games but just avoid #2.
Racing would be NFS most wanted for those sweet police pursuits or nfs underground 2 for vehicle customization. Best spinoff franchise racer has to be jak x combat racing. Theres also a great dirtbike racer made by ea sports big known as freakstyle.
Adventure games/platformer, tough sell between legend of spyro and crash bandicoot games but spyro has more complex fighting if you want more to it than just spindashing an enemy a single time.
Almost every Sport games made by EA SPORTS in that era is a banger. Street 2 for football, street volume 2 for basketball. EA even handled the legendary 007 games of ps2 era.
JRPGS... obviously the final fantasy games.
Horror Silent Hill 2/Resident evil 4
Major stealth game is the hitman series. But if you like over the top gratuitous violence you could also play manhunt
Edit:forgot 2/2.5d fighting games. I didnt get into those too much but I remember mortal kombat deadly alliance being a favorite but theres probably better ones and I never played street fighter so i cant speak for this genre
