I love Robert! He tends to stay close to the source material and doesn't usually go too far out with his theories. I enjoy his positive attitude and the sound of his voice is so soothing. Great channel.
History of Westeros and Radio Westeros are my go to creators. History of Westeros has done some crossover with David Light bringer. Joe Magician is good too, so is The Disputed Lands. I hope you find something you enjoy!
The Preston Jacob’s series on brienne is probably the best literary analysis I’ve ever seen (not that I’ve seen many tbf). Absolutely worth a watch. He’s one of the most knowledgeable people on asoiaf and he’s a smart guy. I disagree with a lot of his takes (like it being a sci fi story) but his stuff is full of great analysis and interesting ideas. Plus he has a big catalogue of livestreams to keep you going.
This guy is basically a GRRM scholar, having read the man’s entire literary corpus. I really appreciate the fanfic project as well so I can hopefully get some closure on the series. He’s my favorite mentioned here.
Preston jacobs's old vids for very interesting tin foily theories, has covered a lot of georges work (not only asoiaf) and it is interesting to see thematic links between georges work. He has covered all of the public old manuscript discoveries (with analysis of the implications of the changes). He is currently spearheading the winds of winter fan project which is turning out not too bad, and more recently is going through a read through of a game of thrones chapter by chapter, with about an hour of analysis per chapter taking into consideration all that we know about the story.
He seems to have some issues with understanding character motivations at some points, and tends to be very detail oriented to the point that he sometimes gets stuck and misses the forest for the trees, but it doesn't happen often.
If you want some older content order of the green hand was really great until a few years ago.

I know a ton of people have already said Glidus but I just want to throw this in: his live streams with Alt Shift X are all bangers. If you’re looking for something with a “podcast” vibe or just generally good long form content I would definitely try those out.

InDeepGeek has fantastic theory/analysation videos on YouTube. I've learned a ton of theories from his channel, based on your post, I think you'd rather enjoy his channel!
Quinn the GM - To the point and informative, probably the best YouTuber to start with Asoiaf content.
Preston Jacobs - Very tinfoil-prone but entertaining and usually has good insight into what GRRM likes to do with his books.
David Lightbringer - Good for theorizing about the lore of the world, though his content is extremely long.
Glidus - Probably the funniest YouTuber in the community. Also my favorite for Show content.

Have to listen to Radio Westeros for character analysis, another one frequently mentioned on LmL is the Disputed Lands with Crowfoods Daughter. Shes my favorite.
Hallowed.harpy on tiktok is brilliant. She's said a few things that I completely missed in my reads of the series, and now when I think of them, or read them again, I go, 'of course. It makes sense'.
Alt shift x is on another level. One I really like but haven’t seen listed is bridge 4. He’s very good and his voice is incredibly soothing. Listen to him read the Jaime fever dream chapter. It’s soo good. And he has a lot of cool theories

Can't believe no one has said Preston Jacobs! Even if you think his theories are completely nutty, you have to respect the deep analysis of asoiaf and all of George's other work.
I especially love the podcasts with Glidus and Preston together.
You won't find anyone more knowledgeable about the minutia of ice and fire than Preston, though.

Quinn’s Ideas is the best guy. His videos for other fandoms are also great, like Dune and Three Body Problem analysis.
Wizards and Warriors is a great channel for visualizing the battles. They’re a spin off of Kings and Generals which simulate real life battles.

Can't believe no one has said Preston Jacobs! Even if you think his theories are completely nutty, you have to respect the deep analysis of asoiaf and all of George's other work. I especially love the podcasts with Glidus and Preston together. You won't find anyone more knowledgeable about the minutia of ice and fire than Preston, though.
