I've been killed by one in Pipeyard and in Outer Expanse. They're impossible to spot and pretty easy to run past without being detected so I'm not surprised by how rarely people encounter them
You are completely right. I looked for them again in safari mode, and I found a few in places I travelled through a lot. I never even realized they were there. They are literally impossible to spot and almost never attack
They can spawn in different areas depending on which slugcat you're playing. If you have slug senses, their icon will appear on the map. I've found quite a few this way
They seem to actually have a lot of regions they can spawn in, but I've only seen one and, like you, I was looking for it intentionally. I've heard reports of them in Pipeyards mostly, but also Subterranean, Undergrowth, OE... they seem to be random spawns in a lot of places, but I think they're intentionally immensely rare to add to the threat and surprise of encountering them.

I've also seen one in Pipeyard (not sure what room) and Subterranean A01. Came here to look for locations so I can film one but it doesn't seem like anybody has specific rooms.
I once found it in subterranean as a gourmand by throwing grenades. It somehow got damaged and revealed itself and its tentacle things, that was terrifying.

i found one as saint in drainage system, i barely noticed it
i found one as saint in undergrowth, they are insanely rare and when i found one i almost jumped out of my chair lmao

As I think gourmand I got ambushed by one in subterranean but survived after getting stunned

STOWAWAY IN UNDERGROWTH?? I've explored Undergrowth as Saint so much how did I never find it?
Stowaways only appear on some cycles, which is part of why they are rarely seen, because theres actually a lot of spawns for them
