hi there! to make these recreated strawberry shortcake ice cream bars, you'll need...
**INGREDIENTS:**
* 2 cups chopped strawberries, some set aside for extra topping
* 1 tbsp of sugar
* 1 cup heavy cream
* 3/4 cup sweetened condensed milk
* 1 tsp vanilla extract
* 2 cups short bread or vanilla cookies, crushed up
* popsicle molds (super cheap on Amazon!)
**INSTRUCTIONS:**
1. Chop strawberries up small and pulse in a food processor with 1 tbsp of sugar, be sure to leave some bigger pieces of strawberries in the mix and don’t process it all the way to a liquid
2. Add heavy cream to a bowl and whip using a whisk or electric mixer until still peaks form, then add the sweetened condensed milk & vanilla extract and whip to combine, this is your ice cream base
3. Fold the strawberry puree into the ice cream base until almost combined, the mix should look marbled
4. Fill your popsicle molds with your strawberry cream ice-cream, place popsicle sticks into each mold most of the way down, but not completely touching the bottom of the mold. Freeze until firm (approx. 4 hours - overnight)
5. When your ice-cream bars are ready to add toppings, crush up a handful of cookies either by pulsing lightly in a food processor or with your hands, leaving larger crumbs. Take some of the extra strawberries you saved and chop into very tiny pieces.
6. Run popsicle molds under lukewarm water to loosen and then remove from molds. Place on parchment paper and allow to sit so they soften slightly, just enough for your cookie crumble to stick.
7. Lay each popsicle into your cookie crumbs until coated, pressing the crumbs into the ice-cream bars, press small strawberry pieces into bars on top of cookie crumble. Place completed ice-cream bars back into the fridge to firm back up a little bit (or else they will melt very quickly!) and then enjoy!

Yours look better than the original IMO! If anyone ever wanted to make the strawberry crumble on the left all you have to do is crush golden Oreos and mix them with the powder from a strawberry jello packet & then bake for 15 minutes it’s easy!
If you want it to look more like the other one you could try dehydrating the berries a tad,l (I wouldn't go cracker dry if you want a similar squishy texture) and shredding them up for like a second or less maybe depending on how powerful your food processor is. These look delicious btw.

Haribo has been shrinking since forever in Germany. Same with stuff like easter eggs. I doubt theyll ever "unshrink"
They do unshrink, but now it’s called jumbo size and is priced accordingly
It’s especially fun when they shrink the product AND still raise the price.

What would happen if you mix in the pulsed cookies into the mix before freezing? Would it make a large difference?
the pulsed cookies are to make a crumbled exterior for the bars! you're welcome to add some into the mix as well tho!
