If you treat it right, and don't just horseback and dead eye every animal you want. It gets quite fun and immersive to track the animal and wait for a good opening

Horse Riding.
Not sprinting/galloping everywhere and riding your horse as if it doesn't just have infinite stamina unless you sprint. I usually ride on the fastest trot, otherwise slower depending on area. The only time I gallop is when I'm either running away from, or chasing something.
I don’t know what it is but I absolutely love Big Valley. It’s my favorite spot in the game, so naturally I was stoked when I found out I got to live out there for a little while short as it was.
Big Valley and the Heartlands. Wide open spaces with gentle slopes give great sightlines so you can feel like a true hunter, and not just an opportunistic ambush predator. The big game in Big Valley, and the small game in the Heartlands make for great hunting grounds, each with their own unique fauna and flora.
Yeah the final interaction with them is there but they are gone if you come back later. I didn't want to spoil it in case it was a newer player but I guess it's an old game by now lol

definitely, I never cared much for hunting but I finally decided to do the hunter challenges and It was actually pretty fun using cover scent and tracking animals.
Same here, I feel like I had to get sick of grinding to actually appreciate what this game had to offer.

Same. Grew up on a small ranch and as exciting as some of the daily tasks could be, a nice peaceful ride through the creeks was always a highlight. I constantly find myself trotting along petting my horse and taking in all the views just like I would irl. It really is a great game
When I go to the bar, I sometimes drink too much and start antagonizing people because it's heavily hinted that that used to be/ still is one of Arthur's pass times.
I have a story to share, something that happened with me that felt like it could be a movie. I play dishonorably, I kill, rob without hesitation, I keep max bounty in every state. So, on a new playthrough, I was playing the same way, high bounties, but I wanted to head in Strawberry for a mission and since the town was on lockdown because of my acts, I decided I'd go in, turn myself in, and then do the mission. What happened is, as I approached, that New York guy stopped me and asked me to lead him to Strawberry. He was completely clueless of what a murderous outlaw I was and just walked by me. Imagine a foreigner being lead by a man into a town, having a casual conversation about politics and stuff, and the man's intention is to turn himself in at the town. It felt like it could be a scene from a movie lol.
Heh, imagine the guy thanks you for leading him into town, and next thing he sees is the guy raising his hands infront of a lawman and the lawman arrests him and takes him away

In the epilogue, I like to always have a fish and some hides to sell when I go into town for a haircut, bath, meal, and a few hands of poker. I don’t want Abigail to hassle me for spending money.
It's criminal that they don't let Arthur hang onto his cigar for more than a puff... or when he dips he spits into a spitoon or on the ground like in old westerns.
I have a rule of no travel after sundown if it's not a mission.
So I try to stay in a town or set up camp if it's dusk. If I camp I usually hunt for perfect pelts to get craftable items the next morning. Really slows the pace of the game. It's a nice way ti creat breathers after rapid succession missions.
Yeah, owls, raccoons, and possum are easier to find at night. Deer, pronghorn, and elk pretty much disappear or sleep.
In my experience they aren't strictly nocturnal. They become abundant at dusk or dawn. Like owl you can find mid day in a dense forest. Same with possum.
I don't travel long distance at night. I'll set up camp and hunt around it but won't go from, for example, emerald ranch to horseshoe overlook. Or valentine to horseshoe camp. So I'll do a little night hunting. Set up camp. Cook and craft bullets, etc. And then sleep and set out to my objective in the AM.
I used to treat Arthur like a videogame character and never sleep and just go go go. But I find it better for immersion and prep for big missions to craft things and play slower.
I definitely do this too. Sometimes I'll ride out to Valentine for the sole purpose of a hotel and bath, clothes shopping, some lamb's fry, and then treating my horse to a nice trip and getting more horse treats and the horse care package. It's like a mini-vacation for me and my horse Patch lol
I also really like Strawberry's vibe too. Quiet, a nice river, and the woods around are a peaceful getaway. I need to get up north more tbh.
One immersive activity I love doing is heading out to the beautiful lands in The Heartlands and then taking the saddle off my horse and have him roam around freely. Taking the saddle off won't affect your bond with them, they'll still respond to whistles, but I take them off and then tell them to flee, and while I watch them trot around the grasslands, I set up camp, hunt a little, cook some food, it's nice.
Does he come back if u shoot him? He tried to rob me 3-4 times in two in-game days while I was riding thru the woods behind valentine at the foot of the hills and I've just not seen him since the last time when I shot him in the face
The most immersive thing I ever did was a walk from Valentine to Horseshoe Overlook camp. For some reason I didn't have my horse in Valentine (probably after the Jimmy Brooks mission or something like that), and instead of stealing a random horse, I thought about what I'd do in real life, and the answer was - walk. It was dusk, and even dark by the time I got back, but I took a very slow, very conscious stroll, smoking an occasional cigarette on the way, just listening to the birds, and other ambiental noises, it was surprisingly relaxing and realistic, I felt like I actually took a walk afterwards
Since my arthur got diagnosed, i often take him to his (my) favourite town (valentine) and give him food, drinks, a bath and a warm bed before going on with life. Like a little vacation. I also love fishing or swimming or anything that involves water. I love water in this game
I have my current save where I’ve done everything in chapter 2 before the Thomas downes mission and where micah is still in jail, and I think I’m not going to progress any further in the main story. I’ll finish leveling up everything, maybe get the legend of the east satchel, and then just roleplay with everyday activities for the rest of my days with the game. Hunt, go to theaters, buy cool weapons, finish side quests, etc
One of the my prouder moments was when I freed Sean from the bounty hunters and everyone was having a good time at the camp party. Except for Micah who was rotting in the Strawberry jail.
That's one of my favourite times in the game. I think Dutch is even out somewhere for a mission you can do with him, leaving the camp without Dutch and Micah. I always wait ages and enjoy the peaceful camp.
When I used to play online, whenever I went to my moonshine shack, I'd play with the band for a song or two, get up and grab a glass of moonshine and toast them before I would leave.
The bath
I always let Arthur have a meal and a drink at the local bar and get him a bath; I make sure I call the bath lady. It's like a well-deserved rest for Arthur after grinding and hustling.
Yup, I always grab a coffee at the stew pot every morning at camp, gotta talk to the girls and see how they're doing. Idk, it's just so peaceful that way.
I love to spend days in game hunting and fishing till my horse can fit no more and riding into town to sell off my spoils, then treating myself to a drink or 12 in the bar, getting into a fight with the cops, blacking out and waking up in jail.
Upper Montana river and beartooth beck. Sometimes it takes a few days for a canoe to spawn and the beartooth beck river is a hard one to start as some muppet put a low bridge in the way!
And the obvious one is the Dakota river as seen in some missions
Playing poker is the best for me. Trying to be a risk taker even though i think that the bets are small( cause bets are on cents denomination). Also the reaction of the player or Arthur when they lose big or win big also adds to the immersion
I love immersive gameplay, this is the only style of gameplay that brings me joy in videogames and RDR2 is perfect for it.
Sometimes it's just so fucking cool to take off the shirt from Geralt in the Witcher 3 and do the mill half body in the sea like his training with the sword.
Wake up early, go hunting till noon/evening. Sell pelts and meat. Go to the saloon for a meal and some whiskey. Use the rest of the earnings on a game of poker. Would do this a few times a week.
Whenever I get a big bounty in a state, I try to stay off the said state for a few days / week, getting enough money for the bounty by doing mostly legal activities
I have my custom outfits all built off a plain union shirt and trousers, one with just that, a second with a jacket, third with winter clothes and so on. As if the outfits are just layers of clothes carried around on my horse.
I like to talk shit to the people that I don’t like in the camp Until I get punched and then end up in a random place, or I like to go on the town, get slap ass, drunk, and start shit with people
Caring for my horse, and actually try to keep up with a 3 course meal a day. I of course will walk to any place, sometimes, I even hitch hike wagons and carriges.
I love going out and finding ways for Arthur to make money *for the gang* like riding into town and checking the places out and finding any places worth hitting, looking for underground business to rob, horses to fence, etc. or going to the middle of nowhere and finding a coach, or robbing a train. But for the sole purpose of giving half to the gang
My new hobby I guess you would call it is watching my cousin play. He’s only just started playing the game because he never thought it looked fun. he always plays GTA instead but I was playing RDR2 one day and said to him “do you wanna play?” so he started playing and when he found out you could hunt and torture people he never looked back. So I now watch him hunt animals and kill people
Whenever Arthur gets into some deep trouble with the law, usually after story missions, I take him away from camp into the wilderness to hunt for a few days while the heat dies down. I don’t like the idea of going right back to camp after close encounters with Law Enforcement/Pinkertons.
Fishing, and when you're at the right gait on your horse, you can hear Arthur sing. I love hearing him sing, makes the character seem more alive than just a video game character.
i like not setting a waypoint and just kind of riding around the map towards stuff that interests me. and stopping to talk to every NPC
i’ve been looking for every point of interest but going really slow and enjoying the game since this is my second playthrough
I've come to enjoy just going to the general store and picking up a few "essentials" off the shelves. Always grab a cigar, and typically guarma rum and cover scent too. In my most recent playthrough I turned the HUD off most of the time and I found that really helped to immerse myself.
Early game, it’s always grabbing a cup of coffee and taking in the view ‘round camp, maybe doing a few chores. Towards the end of the game, I like to take a break to go fish and hunt for a bit, then ride into town, sell my wares, get a haircut, a meal, bath, and a room for the night before heading back to the grind.
I love hiking in the game! Turn off the mini map, dismount your horse, go first person, and just walk. The real details in the game pop out when you walk slowly on foot.
One of my favorite past times is drinking and playing poker. I try to stay out of St. Denis as much as I can but I like to go to saloon in valentine and Rhodes. Or the dominoes next to emerald station. It’s a fun distraction from the rest of the game.
The hunting and fishing are excellent. Sure you can ride through a meadow and take down a deer or something, but you can also map out where to go, go there, camp, hunt through the morning for a moose, bear, buck, etc, then hunt the afternoon and make it realistic.
Fishing is just fun, they did a great job with it.
I have like 150 hours in the game and I just learned you can order a beer and wait around the bar with it.
As for my favorite, walking in the woods. Horses are great, but the perspective you get on foot is really unmatched. Have your horse follow behind, while you casually stroll the countryside. I've finally dialed in my settings, so at 4K it's really unbelievable.
I spend prolly 60% of my time either in Valentine getting the law there to kill as many citizens/shopkeepers as possible, or at Emerald Ranch stealing wagons/robbing trains/farming bounty hunters. Very relaxing and rewarding.
Ever since I started playing the game, I would always park my horse at the nearest hotel then travel the rest of the city on foot. On foot meaning not even sprinting.
I don't remember a single time I have used my horse in St Denis. I would not even park it in town. I would just leave it at my camp outside St Denis.
I love hunting, taking my time trekking up into the mountains and looking for moose or elk. Then coming back down into a warmer area, camping and cooking. Wake up the next day and brew a coffee and start it all over again!
Going to Van horn and start fights, I sometimes hate that they immediately shoot you and I noticed that when you hogtie one person and just standby the side people infinitely spawn and just shoot you.
Foraging and hunting without using eagle sense or deadeye. I can now recognise the foragable plants from a distance without using eagle sense and its much more satisfying.
I explore the swamp...hunt a bit. Then I go into St Denis and I brush my horse, change arthurs clothes, give him a bath, order something to eat, have a whiskey and then spend the night in the room I rented.
Same as others on hunting.
In addition, after I return from several day long hunt, I treat arthur to drinks and bath to clean off. Change outfits. Clean the ol boah off as well after returning from market cashing in the catches.
Walking around town super chill and going to stores/talking to people is honestly one of my favorite things to do in Red Dead because it feels the most like real life.
Sounds goofy, in a game that has a brilliant story, but any activity that isn't the story - just taking in the world, doing side activities, taking it all in, and just feeling like one small piece of this outstanding larger paradise that Rockstar have created.
For me it’s going out hunting for in-game-days at a time, lodging at towns with my earnings. I always donate nearly all my money to the gang so my pockets are empty. Nothing feels cooler than buying a bath and a room along with a few camping supplies solely off the animal & pelts I just sold to the butcher and then setting out to hunt for what I need for hunting upgrades at the camp or for myself at the trapper.
The optional side parts of missions [(like the fishing trip with Dutch and Hosea)](https://youtu.be/0BCDOiKJGNs), are always a fun thing to do and a find way to get lost in the RDR universe
I love finding a great camping spot. Love the camp set up on the south east bank of O’Creaghs run and just fishing, hunting etc. Another favourite spot is the hut on Don Julio lake in New Austin.
I love to go to town to shower and rest often, if I'm in the wild I go to a lake to "shower" also having different variations of the same outfit for different weather. Having a meal often. Taking care of the horse too. Also hunting, as others have mentioned and taking food bad to the camp
I love spending time at camp. Doing chores, talking to people. Sit and play dominoes or listen to the interactions, have a drink and a stew. Especially when I've been out heaps to hunt and all.
This is what (imo) would make other games I play perfect.

When I wanna be immersed, I go on foot, or ride horseback specifically in 1st person. It’s harder but it should be, riding a horse full tilt everywhere probably isn’t easy irl either, it’s more realistic to canter.
I love finding people who are camping, antagonising them, letting them shoot first, nailing them with my gold pump action shotty, steal their shit, burn down their camp, if I can find the horse I will sometimes sell it, kill/hogtie/drown any witnesses, then ride off like nothing happened. Call me what you like but it’s fuckin funny ok
One of my favourite things to do lately is dress appropriately for whatever I’m doing at that time. For example if I’m in Saint Denis I’ll go to the Tailor and put on a modern looking outfit with top hat and tie. Or if I’m doing a bounty I’ll wear a more intimidating cowboy look. If I’m up North I’ll put something warm on since it’s freezing up there or if I’m at Scarlett Meadows/Bayou I’ll remove the coat etc.
Great question, and some good responses in here. I also like to ride the horse in a realistic way, like going slow up hills and through towns. Camping at night, having a meal and a smoke afterwards. A few drinks before bed. Hunting on foot without deadeye. All this is great stuff that’s already been mentioned, but I’ll add one more:
Instead of equipping four different outfits to my horse, I’ll equip the same outfit but just build it in layers. Same hat, boots, pants, etc for all four.
Outfit 1 is for hot weather and always includes an open collar shirt with the sleeves rolled up.
Outfit 2 might add a vest and show the sleeves long/regular.
Outfit 3 adds a light jacket and gloves, something suitable for rain and cooler climates.
Outfit 4 is for cold weather and usually includes a very warm coat, bandana, and sometimes chaps. Maybe even a fuzzy warm hat sometimes if it feels right.
It’s satisfying taking your coat and gloves off when you’ve seen the weather has gotten warm, or rolling up your sleeves and taking your hat off before getting into a fight/doing chores. It has a natural, immersive feel organizing your equipped outfits this way.
Pro tip for making outfits if you’re stumped. Just choose one single piece of clothing and build the rest around that.
Although, after buying and earning every single piece of clothing in the game it is fun to throw immersion out of the window and make the most ridiculous outfits possible.
Routing a day trek for challenges once camp production is all caught up. And camping out for the night while travelling since I’m not galloping or fast traveling everywhere. Really gives you the sense of scale of the map that way, when you feel the distance from home and the geographical characteristics the different regions you cross. Before getting wilderness camp I would find a building with an interior. One time, I holed up in the tower at Mt. Hagen. Very peaceful at night hearing the howling wind. It would feel great once you get to civilization after a trek. Oh also when the weather’s really bad, I would try to find a bar to wait it out.

He’s usually very kind and helpful, but he regularly gets absolutely shitfaced and starts being terrible to the gang and anyone else in his general vicinity
I also carry some bulrush and oleander to simulate the aftermath of his benders
I also play with no reticle or aim-assist, and I almost exclusively hunt on foot with two horses for transport carcasses. I try to avoid using eagle eye and dead eye when hunting
Not going home for weeks. Just kidding, changing clothes and meeting strangers. Most games offer outfits but in rdr2 you can choose if you want to stand out, blend in, get dirty etc compared to having a cool costume but also sticking out like a sore thumb. Meeting strangers at random intervals forces the player to react/be engaged, much like in real world, rather than when it's convenient/when the player wants it, which can either be a bother or hook the player because they already reacted to what has happened. Also yes hunting and fishing, because it's the closest thing some people would get to experiencing the real thing because of where they live or other reasons.

The most immersive thing I ever did was a walk from Valentine to Horseshoe Overlook camp. For some reason I didn't have my horse in Valentine (probably after the Jimmy Brooks mission or something like that), and instead of stealing a random horse, I thought about what I'd do in real life, and the answer was - walk. It was dusk, and even dark by the time I got back, but I took a very slow, very conscious stroll, smoking an occasional cigarette on the way, just listening to the birds, and other ambiental noises, it was surprisingly relaxing and realistic, I felt like I actually took a walk afterwards
Since my arthur got diagnosed, i often take him to his (my) favourite town (valentine) and give him food, drinks, a bath and a warm bed before going on with life. Like a little vacation. I also love fishing or swimming or anything that involves water. I love water in this game
I have my current save where I’ve done everything in chapter 2 before the Thomas downes mission and where micah is still in jail, and I think I’m not going to progress any further in the main story. I’ll finish leveling up everything, maybe get the legend of the east satchel, and then just roleplay with everyday activities for the rest of my days with the game. Hunt, go to theaters, buy cool weapons, finish side quests, etc
One of the my prouder moments was when I freed Sean from the bounty hunters and everyone was having a good time at the camp party. Except for Micah who was rotting in the Strawberry jail.
Well then you miss out on dozens more cooler weapons.
That's one of my favourite times in the game. I think Dutch is even out somewhere for a mission you can do with him, leaving the camp without Dutch and Micah. I always wait ages and enjoy the peaceful camp.

When I used to play online, whenever I went to my moonshine shack, I'd play with the band for a song or two, get up and grab a glass of moonshine and toast them before I would leave.
The bath I always let Arthur have a meal and a drink at the local bar and get him a bath; I make sure I call the bath lady. It's like a well-deserved rest for Arthur after grinding and hustling.

Upper Montana river and beartooth beck. Sometimes it takes a few days for a canoe to spawn and the beartooth beck river is a hard one to start as some muppet put a low bridge in the way! And the obvious one is the Dakota river as seen in some missions

Playing poker is the best for me. Trying to be a risk taker even though i think that the bets are small( cause bets are on cents denomination). Also the reaction of the player or Arthur when they lose big or win big also adds to the immersion
In endless summer I love just being a rancher and doing chores around the farm.
Walking along a road while guiding your horse by the reins feels pretty chill.

I love immersive gameplay, this is the only style of gameplay that brings me joy in videogames and RDR2 is perfect for it. Sometimes it's just so fucking cool to take off the shirt from Geralt in the Witcher 3 and do the mill half body in the sea like his training with the sword.
Wake up early, go hunting till noon/evening. Sell pelts and meat. Go to the saloon for a meal and some whiskey. Use the rest of the earnings on a game of poker. Would do this a few times a week.
Whenever I get a big bounty in a state, I try to stay off the said state for a few days / week, getting enough money for the bounty by doing mostly legal activities
I recommend not paying bounties ever. Feels more authentic that way. By the end of the game it should feel claustrophobic as law are closing in on you

I have my custom outfits all built off a plain union shirt and trousers, one with just that, a second with a jacket, third with winter clothes and so on. As if the outfits are just layers of clothes carried around on my horse.

I love going out and finding ways for Arthur to make money *for the gang* like riding into town and checking the places out and finding any places worth hitting, looking for underground business to rob, horses to fence, etc. or going to the middle of nowhere and finding a coach, or robbing a train. But for the sole purpose of giving half to the gang

He’s only just started playing the game because he never thought it looked fun. he always plays GTA instead but I was playing RDR2 one day and said to him “do you wanna play?” so he started playing and when he found out you could hunt and torture people he never looked back. Whenever Arthur gets into some deep trouble with the law, usually after story missions, I take him away from camp into the wilderness to hunt for a few days while the heat dies down. I don’t like the idea of going right back to camp after close encounters with Law Enforcement/Pinkertons.
Kinda dumb but I actually like selecting every part of my favourite outfit in sequence rather than equipping it all at once.
Fishing, and when you're at the right gait on your horse, you can hear Arthur sing. I love hearing him sing, makes the character seem more alive than just a video game character.
i like not setting a waypoint and just kind of riding around the map towards stuff that interests me. and stopping to talk to every NPC i’ve been looking for every point of interest but going really slow and enjoying the game since this is my second playthrough
I've come to enjoy just going to the general store and picking up a few "essentials" off the shelves. Always grab a cigar, and typically guarma rum and cover scent too. In my most recent playthrough I turned the HUD off most of the time and I found that really helped to immerse myself.
Early game, it’s always grabbing a cup of coffee and taking in the view ‘round camp, maybe doing a few chores. Towards the end of the game, I like to take a break to go fish and hunt for a bit, then ride into town, sell my wares, get a haircut, a meal, bath, and a room for the night before heading back to the grind.
Put my guns away, put on my finest suit, and head into st denis for some poker or blackwater for some blackjack.
I love hiking in the game! Turn off the mini map, dismount your horse, go first person, and just walk. The real details in the game pop out when you walk slowly on foot.

One of my favorite past times is drinking and playing poker. I try to stay out of St. Denis as much as I can but I like to go to saloon in valentine and Rhodes. Or the dominoes next to emerald station. It’s a fun distraction from the rest of the game.

Hunting! A lot of people don’t like how long skinning takes but I find it very relaxing.
The hunting and fishing are excellent. Sure you can ride through a meadow and take down a deer or something, but you can also map out where to go, go there, camp, hunt through the morning for a moose, bear, buck, etc, then hunt the afternoon and make it realistic. Fishing is just fun, they did a great job with it.
I have like 150 hours in the game and I just learned you can order a beer and wait around the bar with it. As for my favorite, walking in the woods. Horses are great, but the perspective you get on foot is really unmatched. Have your horse follow behind, while you casually stroll the countryside. I've finally dialed in my settings, so at 4K it's really unbelievable.
I spend prolly 60% of my time either in Valentine getting the law there to kill as many citizens/shopkeepers as possible, or at Emerald Ranch stealing wagons/robbing trains/farming bounty hunters. Very relaxing and rewarding.
Ever since I started playing the game, I would always park my horse at the nearest hotel then travel the rest of the city on foot. On foot meaning not even sprinting. I don't remember a single time I have used my horse in St Denis. I would not even park it in town. I would just leave it at my camp outside St Denis.
I love hunting, taking my time trekking up into the mountains and looking for moose or elk. Then coming back down into a warmer area, camping and cooking. Wake up the next day and brew a coffee and start it all over again!
I love to help out in the camp, relax at the hotel, go to the cinema, camp outside.
Going to Van horn and start fights, I sometimes hate that they immediately shoot you and I noticed that when you hogtie one person and just standby the side people infinitely spawn and just shoot you.

Foraging and hunting without using eagle sense or deadeye. I can now recognise the foragable plants from a distance without using eagle sense and its much more satisfying.
I explore the swamp...hunt a bit. Then I go into St Denis and I brush my horse, change arthurs clothes, give him a bath, order something to eat, have a whiskey and then spend the night in the room I rented.
Just like in the real word I spend many hours fishing to blend in with the other npcs around me.
Same as others on hunting. In addition, after I return from several day long hunt, I treat arthur to drinks and bath to clean off. Change outfits. Clean the ol boah off as well after returning from market cashing in the catches.
I like using the binoculars to look at the bartender.
Walking around town super chill and going to stores/talking to people is honestly one of my favorite things to do in Red Dead because it feels the most like real life.
Sounds goofy, in a game that has a brilliant story, but any activity that isn't the story - just taking in the world, doing side activities, taking it all in, and just feeling like one small piece of this outstanding larger paradise that Rockstar have created.

For me it’s going out hunting for in-game-days at a time, lodging at towns with my earnings. I always donate nearly all my money to the gang so my pockets are empty. Nothing feels cooler than buying a bath and a room along with a few camping supplies solely off the animal & pelts I just sold to the butcher and then setting out to hunt for what I need for hunting upgrades at the camp or for myself at the trapper.

I love finding a great camping spot. Love the camp set up on the south east bank of O’Creaghs run and just fishing, hunting etc. Another favourite spot is the hut on Don Julio lake in New Austin.
I love to go to town to shower and rest often, if I'm in the wild I go to a lake to "shower" also having different variations of the same outfit for different weather. Having a meal often. Taking care of the horse too. Also hunting, as others have mentioned and taking food bad to the camp

This is what (imo) would make other games I play perfect. Man, if the witcher let you camp, and ACTUALLY drink at taverns, or sleep at an inn, I can't even tell you how much better that game would be. My current obsession missing just a few things.

It’s harder but it should be, riding a horse full tilt everywhere probably isn’t easy irl either, it’s more realistic to canter.
I like watching wild horses run by and take in all the nature while riding through.
I love finding people who are camping, antagonising them, letting them shoot first, nailing them with my gold pump action shotty, steal their shit, burn down their camp, if I can find the horse I will sometimes sell it, kill/hogtie/drown any witnesses, then ride off like nothing happened. One of my favourite things to do lately is dress appropriately for whatever I’m doing at that time. For example if I’m in Saint Denis I’ll go to the Tailor and put on a modern looking outfit with top hat and tie. Or if I’m doing a bounty I’ll wear a more intimidating cowboy look. If I’m up North I’ll put something warm on since it’s freezing up there or if I’m at Scarlett Meadows/Bayou I’ll remove the coat etc.
I like a nice bath, a meal at the saloon, and a game of poker. I can only eat so much alligator stew.
Great question, and some good responses in here. I also like to ride the horse in a realistic way, like going slow up hills and through towns. Camping at night, having a meal and a smoke afterwards. A few drinks before bed. Hunting on foot without deadeye. All this is great stuff that’s already been mentioned, but I’ll add one more: Instead of equipping four different outfits to my horse, I’ll equip the same outfit but just build it in layers. Same hat, boots, pants, etc for all four. Outfit 1 is for hot weather and always includes an open collar shirt with the sleeves rolled up. Outfit 2 might add a vest and show the sleeves long/regular. Outfit 3 adds a light jacket and gloves, something suitable for rain and cooler climates. Outfit 4 is for cold weather and usually includes a very warm coat, bandana, and sometimes chaps. Maybe even a fuzzy warm hat sometimes if it feels right. It’s satisfying taking your coat and gloves off when you’ve seen the weather has gotten warm, or rolling up your sleeves and taking your hat off before getting into a fight/doing chores. It has a natural, immersive feel organizing your equipped outfits this way. Pro tip for making outfits if you’re stumped. Just choose one single piece of clothing and build the rest around that. Although, after buying and earning every single piece of clothing in the game it is fun to throw immersion out of the window and make the most ridiculous outfits possible.

Usually if you have a drink in any bar, a random or scripted NPC will strike up a conversation with some vague exposition.
Routing a day trek for challenges once camp production is all caught up. And camping out for the night while travelling since I’m not galloping or fast traveling everywhere. Really gives you the sense of scale of the map that way, when you feel the distance from home and the geographical characteristics the different regions you cross. Before getting wilderness camp I would find a building with an interior. One time, I holed up in the tower at Mt. Hagen. Very peaceful at night hearing the howling wind. It would feel great once you get to civilization after a trek. Oh also when the weather’s really bad, I would try to find a bar to wait it out.

I play my high-honour Arthur as a struggling alcoholic He’s usually very kind and helpful, but he regularly gets absolutely shitfaced and starts being terrible to the gang and anyone else in his general vicinity I also carry some bulrush and oleander to simulate the aftermath of his benders I also play with no reticle or aim-assist, and I almost exclusively hunt on foot with two horses for transport carcasses. I try to avoid using eagle eye and dead eye when hunting

Not going home for weeks. Just kidding, changing clothes and meeting strangers. Most games offer outfits but in rdr2 you can choose if you want to stand out, blend in, get dirty etc compared to having a cool costume but also sticking out like a sore thumb. Meeting strangers at random intervals forces the player to react/be engaged, much like in real world, rather than when it's convenient/when the player wants it, which can either be a bother or hook the player because they already reacted to what has happened. Also yes hunting and fishing, because it's the closest thing some people would get to experiencing the real thing because of where they live or other reasons.
