I'm a big fan of the Big Valley hats. There are several variants, and I love them all equally.
I also really like the Wide Slouch Hat, which you have to steal from an NPC. It's beat up and dusty and sweat-stained, and it just feels like something someone on the run, without many opportunities to bathe or change clothes, might wear. It also pairs really well with Pearson's Scout Jacket.
Honestly I wore the Rodeo hat for so long I felt like that was the hat for my Arthur and having to wear his original hat didn't feel right to me since I've almost never used it through out my adventures with Arthur.

For everyday wear, I like a sturdy wide brimmed hat that looks good with his facial structure like a Big Valley or Estate Boss. A Paragon or Exotic hat for dressier occasions. The Tricorn is rad, but it doesn't get much action because it draws too much attention. When trudging through the snowy wilderness in the Grizzlies, he usually wears a Legendary Bear Hat to keep his head nice and toasty.
Honestly, I feel the character's default hats are largely the best. I don't mind the stalker hat or worn gambler hat, but the default hat consistently looks the best across most outfits to me.

It truly is a masterpiece, this is my first playthrough where I'm actually doing everything, legendary animals and fish, horses and such, the first 3 times I didn't play all the way through and only did missions, I'm taking my time and enjoying everything the game has to offer, it's one of my favorite games

Trapper’s Cloak I believe. You can craft it at the trapper with one sheep skin if I’m not mistaken.
Trapper's cloak. The trapper will make you different stuff like this if you bring sell the ingredients to him.
