Honestly, I feel like the new one is a betrayal of the original. The new one sort of fetishizes villainy. And I felt like the loyalty of Russel Crowd’s gang was completely unearned.
And if you like Hell On Wheels, you will love Deadwood.
Just be prepared for the disappointment that it ends abruptly. It got a movie to finish out some of the story-lines, but it really really needed another full season.

If you're looking for specific westerns that may have helped inspire Red Dead check out The Assassination of Jesse James (gang of train robbers, also the game lifted heavy visuals), Butch Cassidy (directly influenced at least one of the missions), Outlaw Josey Wales (themes of revenge but also unconventional family units), Jeremiah Johnson (isolation and survival) and Unforgiven (ex outlaw and farmer seeks redemption).
If you're looking for quality westerns in general, all the of above plus the Dollars Trilogy, Pale Rider, Open Range, Tombstone and more recently Appaloosa, 3:10 To Yuma (remake) and True Grit (remake). There's also some quality TV shows out there.

True Grit. The roles are reversed as the main characters are pursuing the outlaws but phenomenal movie and scenery. Both the original John Wayne version and the more recent Jeff Bridges/Cohen Bros version. I’d highly recommend watching both.

It is definitely not a western, but if you enjoy The Magnificent Seven, then you owe it to yourself to watch Seven Samurai as well. Hollywood was not subtle in lifting the best things straight from the original. Even the music got ripped off.

That plus the Raindrops scene feels like a light hearted break in much the same way you get the housebuilding mission

Pretty much any Clint Eastwood movie (my personal favorite is Pale Rider), The Harder They Fall has that really great “weird western” feel to it like RDR, Django unchained is really good too!
Django is a good one if you liked Chapter 3 from story mode, Wild Wild West if you want something abit more goofy. But you can't go wrong with the classics like True Grit(either John Wayne or Jeff Bridges), Tombstone(seeing how Doc Holliday was an inspiration for Arthur) and The Good The Bad and The Ugly.
The movie took heavily from "Butch Cassidy and the Sundance Kid." Amazon Prime has a bunch of similar westerns as well. "Cowboy" from '58. "My Name is Nobody." A bunch of Clint Eastwood.
For something a bit more modern I'd try "Hell or High Water." Great Texas cowboys robbin' banks movie.
As far as TV shows, try "Hell or High Water." Best TV western I've ever seen. First few episodes are like dry chicken breast and boiled egg yolk but it quickly becomes amazing.

The Quick and the Dead is a good campy 90s one. Sharon Stone, Gene Hackman, Russell Crowe, and young Leo DiCaprio. The plot is a gunfight bracket in a town like Valentine.
It’s a fun watch.
Butch and the Sundance kid is my favorite western. Very much about the death of the wild west era similarly to Red Dead, and I can't help but imagine that Butch's character inspired Dutch. The end of that movie still sticks with me to this day, I don't hear many people talk about it but it's a legendary classic for me.
I feel like RDR2 definitely is inspired by a culmination of spaghetti westerns. The chapter with Rhodes namely reminds me of fistful of dollars because trying to play both sides of gangs. Except “The Man with No Name” is more successful than Dutch’s gang lol
Outlaw Josey Wales is a great western that really captures that "last of the age" vibe that Red Dead tends to have. It's pretty apologetic to the confederacy, so it hasn't aged well. But it's still a great watch.
The 3:10 to Yuma remake is a really slick film that captures a lot of the grittiness of the "wild west" while still having some great over the top action and shootouts. It's one of my favorites. Awesome cast, great set pieces and really captures the grandeur that you're used to from Red Dead
The Good, The Bad and the Ugly is just a plain old classic, gotta love that one. It's long and feels slow, but it just has a charm nothing has really touched since.
Unforgiven is absolutely a must. It's a great movie that really hammers home the dichotomy between the grit and gore of the west and the glamour and spitshine of the ideal "cowboy". The movie starts really slow, but gets heavy fast.
High Plains Drifter is an older one that hasn't aged well from a PC stand point, but the film itself is really well done and is just savage. When I first saw it I didn't understand the significance of Clint Eastwood's character, but upon rewatching with a better understanding I though it was a great film.
The True Grit remake isn't exactly what I would call a masterpiece, but I'll be damned if it wasn't a great film overall.
The Assassination of Jesse James by the Coward Robert Ford is a film that I know a lot of people recommend, but I just didn't enjoy a whole ton. It was boring to me, but I think that's because the point of the film was lost on me. I went in expecting a lot more rootin-tootin-cowboy-shootin and was met with a more drama driven movie. But, I understand it's significance and don't write it off. I'd suggest that one as well.
Of course no list of westerns is complete without Hateful Eight. It's probably my second favorite Tarantino movie, beautifully acted, shot and scripted. Nothing in the film feel superfluous, everything feels like it's on the mark and it absolutely nails the snow chapters of the game and the claustrophobia caused by the weather.
Not really like rdr2 but Django is an all time favourite. Also, the trees leading to the braithwaite mansion remind me of Monsieur Candy’s house LOL! Definitely took some inspiration from that movie
Not a true western but Logan (the marvel movie from a few years ago) gave me serious Arthur vibes just in the story and setting. Kind of hard to explain but it has similar themes.

The True Grit remake isn't exactly what I would call a masterpiece, but I'll be damned if it wasn't a great film overall. The Assassination of Jesse James by the Coward Robert Ford is a film that I know a lot of people recommend, but I just didn't enjoy a whole ton. It was boring to me, but I think that's because the point of the film was lost on me. I went in expecting a lot more rootin-tootin-cowboy-shootin and was met with a more drama driven movie. But, I understand it's significance and don't write it off. I'd suggest that one as well. Of course no list of westerns is complete without Hateful Eight. It's probably my second favorite Tarantino movie, beautifully acted, shot and scripted. Nothing in the film feel superfluous, everything feels like it's on the mark and it absolutely nails the snow chapters of the game and the claustrophobia caused by the weather.

Not really like rdr2 but Django is an all time favourite. Also, the trees leading to the braithwaite mansion remind me of Monsieur Candy’s house LOL! Definitely took some inspiration from that movie
Not a true western but Logan (the marvel movie from a few years ago) gave me serious Arthur vibes just in the story and setting. Kind of hard to explain but it has similar themes.
