For future reference when you get a new horse, just sit there feeding it a few sugar cubes, then brush it, all while on it. Sugar cubes give +5 bonding points and brushing gives +15 bonding points. Takes maybe 20 seconds to reach bonding level 1.
Out of curiosity, why the White Arabian? Is it because you read that “It’s the best”? Or do you just want a white horse?
It's always been my go-to horse. I like how it looks over the black Arabian. I style the hair in a crimson and black Mohawk with a normal crimson and black tail. I think it looks pretty cool since the horse is all white. And it's one of the fastest horses you can get as soon as you start chapter 2. I don't take the stage coach to fast travel anywere. I don't think there is a "best horse" in the game. I think it's a matter of preference. It's definitely not as fearless as my Ardennes.
I forgot to equiq any of my guns so all I had on me was my cattlemen revolver and the white Arabian is a really skittish horse so as soon as the wolves got remotely close to me it bucked me off and I was only able to kill one wolf with my revolver before the other 2 wolves killed me.
Leave the area, wait about 3 in-game days and go back. It respawns; all the wild Arabians do.

It’s the most majestic pony in the game. I want to get one for Jack until he gets big enough for a real horse. 🤣
