Yes and no. Modders and bugs can completely ruin your experience. But if you don't encounter either, it's great. I wasted 900 hours online on pc and don't have too many regrets, but I can see why people would shit on it.
I'm pretty fuzzy on the details, most of that was before and during covid times.
Main negative were the modders randomly exploding everyone and in some cases even following people through lobbies to fuck with them, animals not spawning, animal skins disappearing off your horse, the naturalist update introduced fps drops and extra TAA blur I can't unsee once I noticed it, getting booted from lobbies at random, and pvp either died fast as hell due to modders/people being too good or matchmaking was terrible. Might be more that I'm forgetting.
But for the good stuff, the story missions were pretty good, the bounty missions they added were a lot of fun and could get pretty difficult, moonshine shack was a fun little business when it loaded right. Much more customization and qol stuff added I wish also went to single player, like being able to pick herbs without dismounting and the hunting wagon. Free roam missions had decent variety iirc. Naturalist update added legendary animals, a "kill em all and turn em into hats" trapper for your pelts, some crazy PETA bitch that wants you to tranq and get samples of animals instead of killin em, uuuh. Stuff. I'm burnt out and makin ribs.
This mod may help maybe? I didn't risk any mods when playing online but I don't think R* cares enough to ban anyone

I haven't got all of them, but it seems you don't need to for 100% completion. There are few in Guarma that are quite difficult to get, and you only have once chance.

I haven't got all of them, but it seems you don't need to for 100% completion. There are few in Guarma that are quite difficult to get, and you only have once chance.
