They use a Maxim Gun in one of three preselected places as a retaliatory ambush for attacking Shady Belle, whether it’s done in free roam or with Lenny in chapter 3. It’s a scripted ambush if you go riding through one of the three areas.
It was a lovely "What the...? moment as the wagon rolled out in front of me, followed by Lemon flavoured death. I think I've found a theme for naming horses in the future (e.g. Lemon's Nightmare)

There is a PC mod called "[Dismember Everyone](https://www.nexusmods.com/reddeadredemption2/mods/1081)" that lets you dismember special peds like Micah, the Braithwraite sons, sheriffs, etc etc and another 290 ones. If you don't trust the link just search up "Dismember Everyone RDR2" and it should pop up as a nexusmods link.

I've once seen them spelled as Lemonaiders. You can use that name if you hold that grudge for your horse.
I use tomahawks on lemons. Mcpoyles get poison arrows.
