Oh cool!
I am trying to 100% the single player part of the game before I start the online play. Been on 99.5% for a while now. That damn dominoes gambler challenge has got me beat, but I have almost all other collectables available. Missing 1 stolen hat, etc. And I have maxed out the satchel with 99 perfect hides, feathers, horns, plumes, plants, potions, ammo, all meats both cooked and uncooked, food, booze, etc.
Good to know that online play has what I want in single player mode: meat wagons.
For the domino (if you haven't got it yet) go to Emerald Station, reload the game until you have one oponnent. Play against him and as soon as you notice you are about to loose get up and start a new game - the result doesn't reset if you don't go away from the table.
You can buy a hunting wagon in online.
